The music, the bread, the experience, it all culminates into the ultimate bread experience. I shed a tear each time it rises, and getting comfortable in my chair (which yes is made out of bread) this is the perfect doughy meal to chow on until my wife (bread wife) get home from the rising station. Great vid as always, keep up the awesome work ❤❤

love your videos and have made several of your breads {all were delicious) If you could do a video on freezing dough. Like when to freeze i.e. before first rise or after 2nd rise and should you thaw it completely before baking or bake frozen if it's put in the freeze after 2nd rise. Also, maybe the best way to reheat bread Those kinds of tips would be greatly appreciated

I use white bread flour for all my recipes and it is great for handmade breads because it is easier to develop gluten :)

Thank you so much, we can see and understand how the baking works according to the ingredients in the dough.
Questions :
1.
I noticed, sometimes you use a thermal resistant flagstone and sometimes you do not.
Could you explain why ?
2. Do you bake having a saturating water steam ( Putting a plate full of water in your oven) ?

I stopped using the stone because it was not very effective. I now use a thick sheet of metal or my cast iron skillet. Both help with oven spring. I do use thinner metal trays, but they still get placed on the thick metal sheet so the heat gets to penetrate.
A lot of the breads I bake have glazes on them so they do not need extra steam. The ones I bake in my cast iron pan get steamed as the lid of the pan traps moisture inside. It is always advisable to steam the oven chamber when baking a bread with no glaze so a splash of boiling water on a preheated tray is a good idea. Just need to be careful!

How do you get the glass on your oven door so clean?
Metal sponge & elbow grease 😄 I have to disassemble the door once in a while to clean between the two panes of glass.
