    2}Beat the eggs, place a bowl of eggs on a pot of hot water, stir in the sugar and vanilla extract, and raise the temperature to about 35 to 40 degrees.
    (If you don't mix it right after adding sugar, it's easy to lump with the yolk, so be careful.
    If you raise the temperature of the egg water like this, you can create a rich and dense foam.)
    3)Lower the bowl of egg water and place the bowl of butter and milk on the pot to heat over medium heat (about 50 to 60 degrees)
    4)Whip at high speed → medium speed → low speed with a hand mixer. Give plenty of foam until it's ivory.
    (When whipping at low speed, bubbles can be generated again as soon as they hit the ball wall, so move the hand mixer very slowly while organizing the bubbles.)
    5)Sift the flour and mix it to the point where you can't see the raw powder, then take a part of the dough and put it in a bowl of heavy butter and milk and mix well.
    (If the temperature of butter and milk is low, microwave it little by little and set it to 50 to 60 degrees before using. If you mix butter + milk first, rather than pouring it right into the dough, you can mix it so that the bubbles don't go out.)
    6)Put it back into the main dough. Again, use a spatula to support it and scatter it evenly so that it doesn't sink to the floor. Spin the ball and mix it into a J-shape. After butter and milk enter the dough, the bubbles go out fast, so work as quickly as possible. Once the dough is evenly mixed, put it in a mold.
    7)At a height of 30 cm, drop the dough into a circular frame, put it on a pan, organize it evenly with chopsticks, and hit the bottom slightly to remove unnecessary bubbles.
    8)Bake at 165 degrees preheated oven for 35 minutes
    9)As soon as you take it out of the oven, you have to give it a shock that hits the floor so that it doesn't crush the shape. Turn the cooling net inside out to cool. Remove the paper when it is completely cooled
    It's more moist and delicious if you seal it with a paper strainer and age it in a cool place for a day
