Sorry, I just saw your question. Your question is a very good one. I think that if the avicado is very ripe and the eed comes out easily it isn't considered a mixture. if it is hard to remove you might be right.
With regard to taking the top off a tomato, could I not take the tomato off the green part instead of removing the green part from the tomato and then I’m taking the good from the bad and there’s no need to take part of the edible tomato with the green top part

Halevay, Shomer Shabbos Yidden should focus on the hargasha of Shabbos as opposed to the minutia that weren’t addressed by Gedolim like Reb Moshe.
You are correct. Tochein is the source of the restriction. Our practice is to be more limiting than the literal halacha requires, so we only cut vegetables a bit larger than usual and even then only at meal time
Oh irony.. You didn't used a side of pepper that had a label on it. So another option: if not using a whole piece of veg or fruit - ignore a label and use other side.

As to your question about removing the pit of the avacado, great question! My brother questioned me on that also. I think that since the pit wasn't embedded in the fruit( it was very ripe and the pit was loose), I didn't think that they were called a mixture. I agree with you that if it wasn't so ripe and the pit was embedded in the fruit it would it would be a more complicated issue. I'm sorry that I didn't see your question untill now. If you grow your own vegetables you can save the seeds from the vegetables that have seeds inside
"sacfricing a bit of your food," put it aside for compost in a proper container and remove stickers on a non Shabbat day

Why are you not allowed to dice the vegetables? What melacha is it a prohibition of? Tochen? Todah and Shabbat Shalom

As to your question about removing the pit of the avacado, great question! My brother questioned me on that also. I think that since the pit wasn't embedded in the fruit( it was very ripe and the pit was loose), I didn't think that they were called a mixture. I agree with you that if it wasn't so ripe and the pit was embedded in the fruit it would it would be a more complicated issue.
