As far as unlocking more classes, I'm guessing they're behind the locked doors. You got both the monstrosities by unlocking doors in the tutorial level, and then you never unlocked another door for the rest of the game.
Edit: I wrote this before listening to your outro. Sounds like you came to the same conclusion. Lol
Nice game. I think there are also different classes behind those doors, you should use the thief to open the doors
