FYI, at that first bakery, those cakes were in a beverage chiller, not a refrigerator. It's generally recommended that food isn't stored in beverage chillers because they don't distribute the cold air evenly between the shelves, so the food can end up reaching a higher temperature than is safe.
I'm glad to see positive comments in the comment section... There are a lot of people complementing him, his ideas and his contents. In his previous videos years ago, the comment section is filled with a lot of negative feedbacks like "Wow, you're stupid" or things like "Bruh yoir contents are not good, fake". May he gain a lot more followers who truly supports him.
The first bakery is definitely an indian bakery because there are items like gulab jamun and veg samosa, also the cake in the beverage chiller had design elements of a lot of indian cakes (chocolate shavings and a maraschino cherry). That bakery might not have specialized in cakes specifically because indian desserts are heavy with fried food soaked in sugar not iced cakes, but yeah it definitely look cluttered and disorganized!
This cake is quite common here in some countries of Asia and it does taste good! The only difference is, baker would exclude the pearls from placing it on top of the cake early and they would put in a different container, so once arrived you can pour it on top of the cake yourself and the taste is exquisite.

You are not stupid. Great idea for a cake. They should’ve covered the boba pearls with a light jelly like they do for freuit cakes and tarts to preserve them from drying or welting. Or they could’ve made dark jelly ballads to use instead of boba balls.

This type of cake is very popular in asia 2 years ago, it call "Bubble milk tea lava cake". The tapioca pearl on the top of the cake have to be kept warm separately when it arrive and be poured on the cake by customer when they eat.
They needed to give him the boba in sauce on the side and then it could be poured on at the last minute before it gets cut. That way they’ll be soft and chewy for eating and they’ll look pretty still

I'm very picky when it comes to texture so wet cakes like tres leches were so gross to me but also tasted really good, took years to get used to but now it's one of my favorite cakes!
We actually have bubble tea/boba cakes here in Ontario - it's a mini lava cake that has a mousse topping with the tapioca pearls sitting in the mousse. You can get regular flavour, and also brown sugar! They're made by Bakecode and sold at Chatime, but looking online, it seems like a bunch of places sell these cakes as well!

My family own a bubble tea place and we often make more than one batch of tapioca pearls each day since they lose their chewiness very fast. We would never use a batch from the day before since they would be hard by the second day. When we make bubble tea at home we would also finish the pearls in one day before they lose their chewiness
"Guys... like both of the pearls are dry and they're grossly damp on some layers." SIR, you left a cake with a very moist topping chilling for two days, of course it's gonna ruin the cake. You would've have a much better experience if you didn't leave them to soak in their own boba juices for two days and enjoyed immediately or at least removed the boba and refrigerated the cakes.
To me Rafael's personality is what keeps me coming back. There's always at least 2 things he says that make me pause the video because I'm laughing. I do cringe when he eats from the zero hygiene places. While I scream, "don't do it, please!"

Probably if there was a layer of hard tempered white chocolate with caramel over which the tapioca pearls were spread just before setting would've prevented the water from getting inside the cake. Or else they could have sent a separate container with tapioca pearls sitting inside a pourable caramel sauce to drizzle over the cake once it arrived

The first bakery looks like any other local bakery here in India :( And looks like that place was definitely owned by an Indian, with samosas and all kinds of Indian sweets. Sadly, in India, many small bakeries and eateries do not give a damn about hygiene. it's their least concern.

I love boba and bubble tea in general so much!!! I lived for one year in Taiwan where they invented it, and it was just heaven. Great idea! I just wish these bakeries had more experience with boba xD
There's actually a lot of boba dessert like boba cakes. There's boba dessert box too! But usually the boba comes in a separate place. I can't wait to see the next video! 😭
Even though the first cake was somewhat naked it still had been kinda patched up with some cream, which might have been a subtle way to cover up the fact that the cake was soggy. They probably did it because they knew that the tapioca pearls would kinda make the sponge much wetter and also because store bought cakes' sponge is always sogged more then it should to not make the cake dry during delivery and if the cake lasts more than the same day. I would have honestly expected better but in their defense you gave them a kinda difficult task and also looked happy with the result, which is what matters XD
Leaving these cakes for twos is what will have caused the tapioca pearls to turn back in to little dehydrated rocks, it will also have meant the frosting deteriorated. I agree completeeely!

Where it went wrong is boba cant go in the fridge or it hardens and your cakes were probably, like most cakes, waiting in the fridge for your arrival.

The cake was wet because they sometimes put sugar syrup or simply syrup in the cake to make it moist. They even put milk and make it like tres leche

yeah, it seems weird to compare a bakery to a cake shop, I'm surprised they even made it, they clearly don't do it often because they didn't have the right size box, it's a bit like going to a chip shop and ordering noodles, if you're lucky they might have them but it's not going to be like a noodle shop.

I love boba and bubble tea in general so much!!! I lived for one year in Taiwan where they invented it, and it was just heaven. Great idea! I just wish these bakeries had more experience with boba xD
There's actually a lot of boba dessert like boba cakes. There's boba dessert box too! But usually the boba comes in a separate place.

I don't know if my eyes are deceiving me, but is that a fly on the caramel drip at 12:28? It looks like one....
Even though the first cake was somewhat naked it still had been kinda patched up with some cream, which might have been a subtle way to cover up the fact that the cake was soggy. They probably did it because they knew that the tapioca pearls would kinda make the sponge much wetter and also because store bought cakes' sponge is always sogged more then it should to not make the cake dry during delivery and if the cake lasts more than the same day. I would have honestly expected better but in their defense you gave them a kinda difficult task and also looked happy with the result, which is what matters XD
It's also possible that it became soggy because they are trying to keep it moist by pouring simple syrup. Assuming that it will be stored
Why did you wait 2 days to eat the cakes...? I think the outcome would be a bit different if they were fresh especially with the 5 star cake 🎂😉😁
Leaving these cakes for twos is what will have caused the tapioca pearls to turn back in to little dehydrated rocks, it will also have meant the frosting deteriorated. I agree completeeely!

Fondant would help or ganache as a barrier to stop all the moisture from seeping into the cake. Great video!
