  • My alternative title is 'Stuff the turkey'. Many people are daunted at the thought of dealing with a huge bird once a year. This is the answer for those who prefer chicken or duck. The secret to make it special is to put a chestnut stuffing under the skin. The full recipe for this short video comes at the end. You may need to double the quantities if you are serving more than six.

    This looks absolutely delicious. It's amazingly impressive that you managed that tricky job to keep the skin whole while lifting it almost entirely off the breast. You didn't show how you started this - hope you can show that next time!
