Krauser can deflect your gunfire back to you at higher difficulties. On hardcore and professional modes if you keep shooting him when he charges at you then he'll get out his knife and deflect a shot or two back to you. It doesn't matter what you shoot him with but the deflected shot will destroy a moderate amount of your armor if you have it and if you don't have armor then half your health

I'm playing on keyboard and mouse so I bound parry is bound to both space and LMB. If I was playing with controller I'd probably just stick to keeping it on L1 (R2 is a trigger so you need to press it a further distance before you get the input, just my personal preference). As for learning timings, Phase 1/2 Krauser is not as dependent on perfect parry timings since he doesn't seem to have the perfect parry restriction that Pro has for other attacks. Generally though, his knife attacks follow the pattern of drawing his arm back, a pause, and then the lunge forward, so try to parry after the lunge. For Phase 3, you ARE restricted to perfect parries only (or the window for regular parry is also somehow shortened) and I find him a lot harder to actually parry. The only attack in Phase 3 I can consistently parry is the one where he twists around and slashes sideways, and I use the visual cue of when his blade arm is 90 degrees from Leon. I then generally just try to avoid his lunge and upward slice (that's why I run around so much in Phase 3). If you want to get really knitty-gritty, you could go frame by frame in this video and check when the knife icon is glowing gold to learn exactly when the perfect parry window starts (the [,] and [.] keys go back and go forward one frame when the video is paused)

Beating Krauser with a knife actually isn't too hard. Beating Krauser with a knife while making it look good is more difficult. I'll admit that it took a lot of practice to do phase 3 without using a healing item (Phase 1-2 are pretty simple to execute).
If you see him move his left hand back, it means he's going for a grab. Simply duck to avoid the grab. You don't have to move at all, just duck when you see him pull his left hand back to avoid the grab attack.

Try to be moving to the right when he does it. Typically he only does it after raising his arm to block, so when you seem him do that, just try to stay out of his range until he does something else. He will sometimes block -> grab very quickly so it's not 100% foolproof, but it's better than nothing.
