I love how easy this looks to put together. Do you think it'd also be easy to switch out the battery to get higher power and speeds on level 3?

I would think that it would be pretty easy. The battery compartment on has 4 or 5 bolts that you have to remove and then plug in a new battery. Thank you for the question!

Big thanks!! I've looked all over through reviews if the battery was replaceable!

My son is 7 about 4.5 ft and roughly 95lbs. Do you think this is a good bike for him to start on?

I have a buddy whose son is a little bigger than yours and he fits on this bike and can ride it around. But I do have to warn that the bike will definently be on the smaller side and once your son grows another 4-5 inches I don't know if he'll fit comfortably after that. But saying that, it is a great little starter bike.
If you really need, and want, the three speed modes then I think you can get a solid 6+ months out of this bike. If you're looking for something more long term the Razor MX650 are on sale right now (I've been able to find for $610 on Amazon). The major issues with the Razor though is that it's much heavier, has lead acid batteries, and no speed modes. This bike isn't as beginner friendly due to the increased power, but it would fit your son for much longer.
I hope this helps a little bit. Let me know what you decide to do as well and how it works out for you. Thank you for the comment and good luck!
