I skip blanching wen ever I go through this process I feel lot of change in the taste.in my point of view I think v r losing various precious minerals through blanch
Blanch mai aapko ubalna nahi hota , aapko sirf palak ko garam pani Mai daalkar nikalna hota hai ,blanch hum tab karte hai jab humko apne vegetables ko soft karna hota hai na ki usko saaf, aap saaf to usko thande pani se bhi dhokar kar sakte ho, blanch karne se palk ki hardnesa kam hoti hai, isliye blanch karte hai.
