Looks great James, here’s a tip for applying spreadable coatings, pour across the grain and then spread at 90 degrees, ie down the grain, it will cover quicker with less overlap, end result no patching 👍
The wobble comes from the single leg James there has to be space in the floor mounting for it to move up and down so nothing you can do about that on a single leg, but it looks really good well done.

You may want to put the table height adjustment knob toward an end or away from the the bench, to make it easier to use. This way you can reach it without crawl across the table. Looks great.
Worth every penny and every hour spent on it, that’s a lovely slab. The wobble would irritate me, like a wonky table in a restaurant 😂 Hopefully the second coat of Rubio won’t make it look too glossy otherwise you could have just got a tin of varnish on it! 😉 Well done, looks gorgeous.

The table is beautiful Walnut is really nice in the full board and you have done it proud with the edge treatment. Did you consider just Danish oil for the surface?
At eight years old (1964), after my open-heart surgery I left the hospital with a shopping bag (larger than todays) full of syringes of various sizes. No wonder I hate needles. ;-)
I’d definitely go with two legs. You’ve spent a lot of time and money on it and it would be a shame if it accidentally broke under pressure with just the one leg

looks great. 2nd leg would be best IMO as all it could take is someone to put a little extra weight on 1 edge or fall against it to cause major damage

It sure is messy in there. I would at least vacuum the floor before adding a permanent fixture.

surprised you didnt go with the stuff you used on the counter tops, considering the kind of wear and tare its likely to get with kids and everything
