Thanks for the video, helped me to see ahead on potential workflow scenarios. The only thing I will be doing differently from yours; 1.Raw Reach in cooler, 2. Charbroiler, 3. Range, 4. Small Plate/Basket counter space, 5. Fry station, 6.Sandwich Cooler/Expo w/ side space warmer for back-ups, 7. Out Window. For some reason I've always done better with a workflow of left to right, it's going to be a little bit strange to have to turn around in the middle of the operation tho. Good luck Smoke Burger!

I guess it depends on your local health code, because where i'm from the health department calls for a 3 bay sink along with a hand washing sink.

wow no fire suppression system..would not be allowed to run in Canada. NO three sinks either..not up to code.
In Michigan they dont do any inspection of gas supplies or fire separation. Health inspection only!

Is it me or is it missing 2 side burners. Not everything is heated on the grill. Also that's like an 18 by 18 grill. If you toast buns, how many burgers you cooking at once? 9ish. Your looking at lines. If you precook, how are they staying warm. Looks like no oven or side burners. People don't like waiting for cold food. If your warming area is under the cover, I hope its not a hot - cold area. Lettuce and tomatoes have to stay cold, burgers warm. Now if this is a hotdog truck setup, that steam table setup is fine. Don't need side burners or over
