I just watched a food Doc where Puffy Tacos came from and was invented in Texas at a Tex-Mex joint called Ray's Drive Inn

Do u guys make your own shells or thy ordered I enjoy making them from scratch for my family u can even make them into a desert sprinkle some powdered sugar on them even put whip n strawberries or blueberries etc drizzle chocolate omg
I would have a two window truck one for orders paying , 2nd for serving food,
when you ever own one you will realized how limited space there is.Second window mean sacrifice usefull space for wall/shelves

One time I asked this Mexican guy, why does your tacos taste better than my tacos and this was his answer..
American tacos are made with ground beef. (trims, parts) and Mexican tacos are made with real steak.
Americans use lettuce and shredded cheese with the ground beef.. Mexicans use cilantro and diced up onions on their diced up steak. The steak is diced up after it is cook medium-rare first.
I never knew this and I am Mexican. well, technically I am Hispanic.. Mexicans are born in Mexico so I'm Hispanic since I was born in Ohio. all this time I thought I was Mexican now I know the difference.

I never really ate real Mexican food. I just had taco bell or enchiladas from TGIFridays. My ex-gf took me to a real Mexican taco joint owned by a Mexican family. Holy cow, the difference in food taste was night & day. I don’t eat taco bell anymore. I’ll try to find a real Mexican restaurant to order tacos or enchiladas with habanero sauce. You’re right about the minced steak. None of them use ground beef.

if you guys are really doing that much business everyday you should be making 150 to 200 pre-made Puffy Tacos before that lunch. Everyday is not going to hurt your quality and you're going to be able to serve a lot more people and probably even more than ever crypto

My wife and I been considering opening a Food Truck..... We have a sandwich called The Public Defender----which when ordered is Free and is supposed to have Lettuce on it but never comes with the Lettuce.
We also have a sandwich called the C/O which has secret ingredients suitcased within the sandwich.
IT has been 2 years now since this post... Did you open up your Food Truck?
Looks delicious however The Puffy Taco was invented in San Antonio by the River Walk.
You shouldn't be eating over your food and prep area. Your dropping your half chewed food into the food your serving.

All they did copy Mexican sope folded into a taco but they use cheddar cheese insted off queso cotija what the big deal .

Basically it's like a chalupa or is folded native taco I'm the king of native tacos n not bcuz I'm native I'm just good at cooking 😆 I hope to have my own truck one day or maybe a restaurant
How’s it going relative? Me, my little brother and sister are working towards getting a food truck as well. One of the menu items we want to have is Indian tacos. We don’t fold ours. We just use the frybread as the base for the taco. Good luck!👍🏽
