Times can vary hugely depending on room temp, humidity and altitude. Mine has cooked for anything between 8-15 mins. It shouldn't be dark amber! Keep testing it every 2 mins once you get to 10 mins, take it off the heat, take half a teaspoon and drop it on a greased plate. Let it cool for a few mins, roll it between your fingers. If it's too soft, put back on heat. It shouldn't be gooy. Don't try to double the quantities, messes up times entirely. A golden to rich golden colour is usually right.

ingredients: 1 1/4 cup sugar, 1/4 cup of water, 2tbsp white distiller vinegar, 1 1/2 tsp butter, 1/2 tsp flavoring of your choice, an oven, a pan, a large plate, something to stir with, and patience. evenly pour the sugar into pan. add water, vinegar, and melted butter. on low, stir until sugar melts, then slowly raise the temp until you see it begin to boil(should be no more than two levels higher) when it boils, turn it down as low as possible so it still boils. cook 15-20 minutes(dont let it burn. it'll turn a yellow/brown color). allow it to cool 3-5 minutes while stirring. add flavor. spread the butter on the plate, carefully pour the mix slowly onto the plate, spread butter onto hands to prevent sticking. pull the taffy off the plate, it'll be hard but be patient. stretch, pull, and twist for 30-60 minutes. add butter to your hands as needed

You could easily add specific temperatures to the recipe by measure the temperatures that are present at the various temp-sensitive points in your recipe. Just a suggestion, if you ever revisit this video.
I think this is the first step for Dragon's Beard candy- a form of hand-pulled cotton candy that uses corn starch and powdered sugar to keep the strands from sticking as you pull, loop over, and pull again to make exponentially more threads.

If the taffy is not pulled, it will just harden. Like a hard candy, such as candy canes or something like that. The processes that make these different candies are very similar as ingredients go. Pulling ensures that the taffy candy is elastic and remains softened. Taffy shops have machines to do this job for them.

Mine came out incredibly sticky - didn't matter how much I buttered my hands, it bonded to the butter and to me! Once it cooled down some it was less sticky, but then I couldn't pull it like proper taffy, because it wouldn't stick to itself anymore. I have an interesting bowl of candy spaghetti now, it is very odd. Tastes all right though.
So, i know its been a while since ya asked... But heres why. You need to reach a specific temperature, not just cook a set time, and so much can vary that and if you get too low it wont setup as much. **but also** humidity plays a large part so you want a dry environment bcuz too much humidity will mean sticky taffy. Which is why theres prty much no taffy to be found in the midwest of USA as its humid as can be here all the time xD And you ideally want under 35% humidity, which is funny to me as it almost nvr drops below 40% here; cept for parts of winter.
I am now in my 60's and this was one of the biggest treats my grandma made us. We always made it in the winter though I cant remember the recipe there was always a bowl of fresh clean snow, I think the snow makes it pull easier but not quite sure, Does anyone from way back in the fifties remember their grandma's recipes for the same pull taffy and did you use a bowl of snow? Looks like fun. I would just add a MAJOR CAUTION about waiting until the poured molten lava sugar in the dish cools down before touching it with your fingers, otherwise, you'll have some serious blisters goin on. I wanna try it. Thanks!

The trick to any candy making is knowing the proper temperature to cook the sugar to. Taffy requires bring the sugar to a "soft ball" stage which is 240 degrees. If you remove it from the heat before that you get what is called the "thread stage" which is a less chewy consistency. If you overcook it you will end up in the "hard crack" stage which is used for hard crunchy candies. Get yourself a candy thermometer that clips onto a saucepan to monitor your sugars temperature as it cooks.

we also made large batches and twisted them and wrapped them in waxed paper. Forgot that part. They were sooooooooooo good!!!!!!!!!!

At first when I was trying this, I was like this isn't gonna work, but then It came together and it tasted good! But I still like laffy taffy more
Cuz laffy taffy is flavoured. You could try addinh food essences for flavors

Is it okay to use oil instead of butter to prevent the taffy from sticking?
Pull, stretch, and twist the taffy for 30-60 mins.? I can do that easily while an episode of The Big Bang Theory or Spongebob is on!
