I've craved this for years and missed this dish for years, kinda leaves a lump in my throat just thinking of it all, oh man! Moms been gone for years now and over the years I check every now and then for recipes online that look familiar to moms, yours comes the closest! Mom used a mixture of both cream of mushroom and cream of chicken too! Milk as well, I've known some of the basics but its been so long since I was a kid and got to watch her make this that I forgot. I'm going to give this a try soon to see if my son will like it just as much as I did growing up! Mmm I can taste that rice now....😌💖😊 Thank you sweetheart, and thank you to your mom as well! 💞💝

Made this casserole last night for the fam. I used rotisserie chicken breasts, that I de-boned and shredded into large pieces. There was maybe one serving left, and there were 5 of us for supper. Think they liked it! I know I did. So simple, and so delicious. Great recipe, I can see this being great for a church potluck or family style get together. Thanks for another great, easy recipe.

My dad use to make this. If your out of milk don't worry. Use little bit of water. We never added salt. My mom was very sensitive to salt. She would grt really bad headaches. If your trying to keep it more low sodium. Skip the sald. Mixed veggies would be delicious or vegal. Use what you got. Making this soon thanks for the reciepe.

I used boneless skinless chicken thighs because they were already thawed in the fridge. I added an extra 1/2 C of rice. 1/2 C each of onion and green bell pepper. 1 heaping C of sliced button mushrooms. Seasoned the chicken with garlic powder, poultry seasoning, salt and pepper. Baked for 55 minutes @ 350 and then put under the broiler for 5 minutes. Let rest for probably 20 minutes while trying to decide if I wanted to eat at 9pm. Lol. Ended up having 3rds. So good that I sent my mom pics of the casserole and a link to your upload. Thank you again for sharing it with us. If im fortunate enough to find some Chicken of The Woods mushrooms this summer, I'll make it again without chicken and only the Chicken of The Woods, bell and onion.
@@ChefWannabesLife i think of you can find some Chicken of the Woods (CoW), it would be a great pescatarian dish to upload. Unless you cut the milk out and made it vegetarian. Which I'm neither of but would would devour the dish made like that. But depending on what part of the States you live in, the window on its season is closing.

Can you use regular white Rice instead of instant rice?

I do this all the time. In my case you Know me I speed things up buy using canned chicken, precooked rice and the microwave. 😁

The only tweak I would make is to add onions. I put onions in almost everything except cake! ;-)

Absolutely, go with regular rice!
You can partially cook your rice as well. I had someone do that and say it worked well, also others have used plain rice and it worked fine.

You make too much work. just put the chicken breasts in there no need to spend time cutting it up.No instant rice makes it taste like mush.
