  • How to Make a Cranberry Orange Cake
    Full Recipe: preppykitchen....
Orange is one of my favorite holiday flavors, and because there are so many decadent treats around this time of year I wanted to share a lighter recipe that with still satisfy your sweet tooth but not fill you with regrets! If you want to make this non dairy just sub in an extra 1/3 cup of olive oil for the sour cream or omit it! I made this without sour cream and it was very nice, just a little less moist.
I used an extra virgin Spanish olive oil from Olive Oils from Spain for this cake and it gave a wonderfully moist crumb with all the health benefits of olive oil! Toasted pecans and dried cranberries rounded out the flavors in this cake very nicely but you can TOTALLY use fresh cranberries for this cake. I might just cut them in half and dredge in flour before adding to the batter. Using fresh or frozen ones will give you an even zingier cake!
This video was sponsored by Olive Oils from Spain. I have to say I was so impressed with their amazing extra virgin olive oil, so fragrent and it really helped make my cake special. Find out more at www.oliveoilsfromspain.org

So I just made the OG version of this recipe which is what John has linked in the description (it’s an 8” round, lemon instead of orange, no cranberries, no pecans, and instead of glaze, you sprinkle sugar before popping into the oven) and…
    IT WAS AMAZING
I’ve tried a few of John’s recipes and always get great feedback but I was told this was the best thing I’ve ever made! I’ll definitely be making more (like this weekend) and I’ll definitely try the bunt cake version around the holidays.

Okay so I made this today. Funnily enough, I have the same bundt pan. I only had two oranges on hand. I didn't have quite enough OJ from my two oranges so I used 1/2 lemon juice and a bit more Olive Oil. I added 1/4 tsp of vanilla to the batter. I used the zest from both oranges and the lemon. I cut the pecans down by a 1/4 cup. With these minor adjustments it came out really really really tasty. yumyumyum. I'm bringing what's left to brunch. I think it's perfect with coffee and breakfast.

If you don't have enough orange juice, add water or milk to make up for it. Adding all that oil is very fattening.

I made this cake for Christmas. I used regular virgin olive oil since Spanish olive oil isn’t sold where I live and I also left out the nuts. The cake tasted delicious still. I used orange flavor cranberries which took the cake to another level.

I love olive oil cakes. I think they are so "adult-like" and not overly sweet. I make a similar citrus cake, but it uses yellow cornmeal and Amaretto. When I make your cake, I think I will add a few splashes of Amaretto. Here's a tip when spraying cake pans: Spray the pan inside the dishwasher! The errant spray will be confined and the dishwasher does the clean up for you. Just make sure it is an empty dishwasher or one that has dirty dishes. I love your channel. Thank you for sharing your talents and blessings with us. Merry Christmas to you and your family --- and that includes your Mom, Rita!

I bought a bottle of Olive Oil the other day because it was half price and I decided to taste it by itself, which I never did before. It was quite bitter! Don;t know if its just this brand or what, but you would need more sugar to compensate in a cake recipe, I would think.

I’m so happy to see your tip about spraying baking oil in the dishwasher. I was pretty shocked a few months ago to see two smallish spots on a chair in my living room, also spots on a glass table, they had to have been caused by the baking oil spray. I will definitely use this tip from now on.
      Thank you for sharing.

I can't wait to try this recipe - my mother's birthday is close to Thanksgiving and since this recipe incorporates cake, pecans, and cranberries, it will be perfect. I'll of course practice before the big day. I love your bundt cake pan so much that I found it and purchased it. I just love how the icing drizzles dramatically down the sides compared to my older, now a bit boring pan. Thank you for your videos!

This looks great!!! I love the tip about getting the batter it for good crisp corners. I have the same pan and struggled with it. Now I'll break it out to make this cake!
One suggestion for the glaze, if you use a bit of heavy whipping cream (or even a tbsp of softened cream cheese), it'll keep the glaze soft instead of getting hard, and you can ice it while it's still pretty warm. (The warmer it is, the more glaze will soak in)

    Updated.
I just pulled my pans out of the oven cooled and tasted. I used mini bundt pans so my conk time was only 35 mins. The texture is very heavy. I followed the instructions exactly and used a scale to weigh my ingredients. Is this how the texture is meant to be, heavy like a pound cake and flour tasting? Curious what could have possibly gone wrong. I've never made an olive oil cake before so maybe I just expected something fluffier. Please help. Thankyou.

Love that Heritage pan, it really makes a unique bundt cake. I actually made some cranberry orange bread with pecans this year. Such a great flavor and I bet the EVOO makes it very good! It might be a little overdose of orange flavor, but there is a blood orange infused olive oil that would be delish in this!
