- This is a fantastic recipe for meat sauce and it is so versatile when freeze dried. You can reconstitute it for spaghetti, lasagne, or even pizza. Package it any of several ways that best suits how you will use it.

What a great video Rose. One thing I love about your videos on both channels is that you don’t just preserve ‘ingredients’ but you are meal focused. Seeing you do this makes me feel even more excited about my freeze dryer that shipped a couple of days ago. I can’t wait to see more freeze dryer meals.
Thank you so much, Joel. We will be doing lots of FD meals. Plus I will be releasing a book on that as well fairly soon.
Mine should be here within a month!
That sauce looked really good. Tfs Red, oh your beginning of the video is so beautiful, would very much love to visit Utah sometime. The part where you're showing the sky with I assume is the beginning of sunset is absolutely gorgeous! Please stay safe and sending hugs to you both! 💜😎
Thanks so much!
This will be going with us on our Fall camping trip. Thank you for sharing.
You are welcome. Hope you enjoy it!
You got my mind going with other things I can throw in the Freeze Dryer. Thank you again. Thank you too for the beautiful shots of Utah. Our state is amazing.
Yes it is! Thanks for your comment.
I'm so glad to know about fast pasta. I'm going to start cooking all of mine up.
You are welcome. It comes in so handy!
How will you folks keep up w/ two channels? But I love both channels so much. Thank you for all the information you give to us.
Our pleasure! Most likely we will not be posting videos as often on this one simply because we are not always out on the trail!
This just makes me "pine" for a freeze dryer! LOL, but even if I had one and didn't need a trail meal, just having both ingredients on hand in the jars would be so nice to grab and whip up a quick meal when we come in from a long day working on the farm or just being gone all day and needing to eat. Thanks you guys!
They are great, but so is a dehydrator and they are much less expensive.
Thank you so much for sharing your adventures with us! ♥️
Our pleasure!
Great meal for the trail!
Yes, quick and easy to rehydrate with boiling water.
🌹 Thank you, Pam and Jim for your well done videos. I am putting this recipe on my schedule to try soon; I’m glad to know about packing freeze dried foods in Mylar meal portion bags.
Our pleasure!
You have so many great ideas. I guess it would be possible to freeze dry the meat sauce along with the cooked noodles.
Yes it would. Others have done that but I have not tried it yet.
Looks wonderful. Easy once you have everything freeze dried. Light weight delicious camping or trails meals. Love your new channel.
Thanks so much!
I cannot wait to make this recipe and freeze dry it as well.
Thank you for such great info you guys!
You are welcome!
Banking is a great idea! Now to find that size of jar in a case. Currently it is a challenge to find anything larger than a pint!
Yes, it is. We found some at Ace hardware recently.
I'm going to cook my pasta like this too! So cool
It makes it very easy.
New HR freeze dryers no longer have the option of Frozen/Not Frozen.
I know! Isn't that great! I love their new process.
Thanks so much for this video... I've got several canned items including meat sauce that's going into my trays today and for the freezer
To get in Harvey [our freezer dryer].
I got the inserts so I'm gonna try those to see how the separation works or portions...
Blessings 🌞
You are so welcome! I have thought about getting those inserts as well. I would be interested to hear ho they work for you.
This is so cool. I really need to make everything you make. Thank you for another great video
You are so welcome!
Wow, That's Amazing, & you also answered my question, before I even asked it, that your going to put it in Mylar bags to reconstitute it. Lol.
TFS TG, & take care too everyone. ❤🙂🐶
You are so welcome!
@@trailgrazers3690 👍🤗❤🙂🐶
Excellent video. Love FD meals for fast and easy meals. Love the previous stew too
Thank you!
Thank you. I so wish I had a freeze drier. I have a dehydrator though.
We saved up for 5 years to get ours. I wish they weren't so expensive.
Nice suggestions.
Thanks Trail Grazers.
Recipe for fast pasta please.
Fast pasta is very easy. Cook the pasta all the way through. Dehydrate or freeze dry it. And there you have it!
Thank You
You are welcome.
Excellent well presented and packed with ideas. Thanks
You are so welcome.
That looks delicious
Thanks.
I would love to have your recipe!!
I just used the USDA tested recipe.
Awesome 🌷🇨🇦
Very nice video, Pam & Jim👏 the name for Italian meat sauce is "ragù" (pron. : ragoo). The original recipe ingredients: onion, carrot, celery, ground beef meat (pork meat may be added as well), tomatoes, basil, oil, a little salt and sugar. One question: the sauce can be dried also in a basic dehydrator? and how long can it be stored? thank you so much and best wishes for your YT channels. Ciao from Italy ⛵
Thank you for your comment, Francesca! Yes, you can dry it in a dehydrator. Shelf life will vary with storage container used and the conditions of the storage area. For our dried ragu, we count on it being good for at least 5-10 years.
@@trailgrazers3690 thank you so much and again auguri dall'Italia🌿🌹
@@trailgrazers3690 I had thought that I heard you say on your other channel that you shouldn't dehydrate meats unless it's jerky. Is that not the case?
BLESSINGS 💖
That sauce looks delicious! Great video!
Thank you 😋
Just ordered a freeze dryer!
WooHoo!!!! Fantastic!
Fast pasta 🤦🏼♀️ generous! Why hadn't I thought of that! Well I know what I need to get movin on:) thank you, the sauce looks amazing. I'll be looking that up.
It really works great! Thanks.
I love this channel tons! I'm saving for a freeze dried. Yikes the are pricey BUT I've watched alot of videos and know they pay for themselves over time. We live at 9700 ft in Colorado mountains. I know there are many many things to freeze dryer! Thank you SO very much!❤️
As high as you live it is really worth it for an investment. It is difficult to pressure can much at that elevation!
@@trailgrazers3690 Thank you! That's what I was thinking but if I can use a freeze dryer...and still get a pantry stalked, then I'm going for it😍!
Genius!
Thank you! And easy, too!
Hello Pam and Jim. Can you give any ideas on complete meal preps for trials/camping. Thanks
Coming soon!
Great video and recipe. I may can or dehydrate, haven’t decided yet. Thanks enjoy new channel
Sounds good.
Binge watching!!! ❤❤❤❤❤❤
LOL! Thank you.
🙏🏻🙏🏻❤️
Please, for the love of everything good, slow down. I cannot keep up with you! Lol. That sauce looks amazing.
LOL!
👍👍👍👍👍
Pam and Jim, have you ever had a time where you reconstituted a freeze dried meal and it had a metallic taste? I've had this happen with baked beans and with lasagna. I was wondering if it could be the tomatoes. What are your thoughts?
So far we have not experienced that, but you may be on to something thinking it could be the tomatoes. We will be on the look out for that and then see if we can diagnose it. Thanks!
I with I could afford a freeze drier. Many of these would work alright in my dehydrator, but the sauce turns to more like a fruit leather and won’t reconstitute as easily.
I did just get a nice All American canner for my birthday. I’ve never pressure canned before, so I’m excited about that.
That is a fantastic pressure canner and you are right about there being a lot you will be able to do with your dehydrator and now with your pressure canner.
I’ve done water bath canning a few times and to be honest some “not approved recipes”. I will say all the the “not approved recipes” all have been loaded with so much vinegar I wasn’t overly concerned. I’m talking recipes where vinegar was the only liquid!! I think revisiting the thickness might be a good idea as it had raisins and chili paste, so was probably thick.
The pickled turnips I made a year ago at about half vinegar I have concerns about. I may not use them.
Can I make fast pasta by dehydrating the pasta? I do not have a freeze drier
Yes, you can. It works great.
I’ve been using my new freeze dryer like crazy. I’ve seen some prefreeze and some not. Why do you? What’s the benefit? Do you do it for all foods? Thanks in advance 🙂 Looking forward to many more freeze drying videos and ideas!
We pre-freeze pretty much everything because it cuts down on the processing time, especiqaly when we select the "not frozen" button to start the batch.
I’ve had a hard time reconstituting pasta from the freeze dryer and getting it soft. Does heating it in a pot help? And do you ever mix the pasta and the sauce together before freeze drying?
I have only done them separately but I think it would be worth trying. Yes, I think pouring the sauce and pasta into a pot and heating up that way works better.
My harvest right just did an update 5.19 and we do not get a choice to choose pre-frozen or not.
Exactly! We included that in our new freeze dryer book: RoseRed Homestead Book Store: payhip.com/roseredhomestead
Where can I find the recipe?
I use Bernardin's recipe. Here is the link: www.bernardin.ca/recipes/en/meat-sauce.htm?Lang=EN-US
Does it work to dehydrate it? And can we vacuum seal it if is dehydrated?
Yes, of course! And yes, it can also be vacuum sealed.
Fascinating information - I was most taken by the fast pasta and had been wondering how to FD it when cooked. If we are not supposed to use oils/fats when freeze drying, how do you stop the pasta from clumping and sticking to each other if you are not oiling the water? Or is that amount of oil okay? I have quite alot of fresh pasta that I was about to freeze but would much prefer to cook it and FD it. i hope you see this message given that I am more than two weeks later than your posting of the video. :) xxx
@roseredhomestead Yes, that's an excellent question. How do you keep the pasta from sticking together once it's cooked???
I don't put oil in the water when I cook pasta and when I am going to freeze dry it, I rinse it very well and it doesn't stick.
@@trailgrazers3690 that’s so cool to know. I was picturing my self peeling sticky pasta apart lol 🙂xxx
What freeze dryer do you have
Harvest Right medium.
? anyone know if I could put my canned pasta/meat sauce into my DEHYDRATOR as I do not have a freeze dryer. Can't find it in my usda/nchfp manuals. Thank you in advance of me wasting my pasta sauce.
If it has meat, it is not recommended for dehydrating, sadly.
Hi Pam. I have a safety Question. My vacuumed sealed spaghetti sauce with meat unsealed after several weeks. It was vacuumed sealed. The lid and loose ring was in place. Should I trust it to be safe?
Yes, it is most likely OK. Just heat it to a boil for about 10 minutes to ensure safety.
@@trailgrazers3690 Thank you so much Pam. I overlooked your response until now.
Is yours a medium freeze dryer!
Yes. It is the perfect size for us.
Did you decide if any of the electric pressure canners were safe?
There are a couple that I tested at our elevation that I feel safe to use for my family. The Instant Pot Max and the Nesco. Obviously I can't officially recommend them, so you will need to decide for yourself.
@@trailgrazers3690 Thank you. I read so many conflicting articles on them
Rose...which book can I find you Italian Meat Sauce recipe
It is a tested recipe--I can't remember which one I used, but I often use this one: www.healthycanning.com/spaghetti-sauce-with-meat
@@trailgrazers3690 Thanks so much Rose. You sure do a great job.
