FOUR (not boring) Vegetarian Side Dishes

  • Looking for a way to spice up your Christmas / Thanksgiving / holiday meal? Here are four decidedly-not-boring vegetarian side dishes. They are updates to familiar sides, inspired by my favourite flavours from around the world.
    - Mexican Street Corn Gratin
    - Crispy Smashed Potatoes crusted with Parmesan Furikake
    - Sumac Roasted Carrots w/ Hot Honey
    - Spicy & Tangy Brussels Sprouts w/ Peanuts & Cilantro

    SUMAC ROASTED CARROTS + HOT HONEY
    Carrots
    - 2 lbs (~900g) carrots, scrubbed clean and bigger ones split in half
    - 1 head of garlic (10-12 cloves, unpeeled)
    - 3 tablespoons (42g) olive oil
    - 2 teaspoons kosher salt (1 teaspoon table salt or fine sea salt)
    - Freshly ground black pepper
    - 5 teaspoons sumac
    - 1 tablespoons (21g) honey
    Hot Honey
    - 1/2 cup (170g) honey
    - 2 teaspoons red pepper flakes
    - 1 teaspoon smoked paprika
    - 1 teaspoon dried thyme
    - 1 teaspoon kosher salt (1/2 teaspoon table salt or fine sea salt)
    - 1 tablespoon balsamic vinegar
    Garnish
    - Flat leaf parsley

    SPICY & TANGY BRUSSELS SPROUTS
    Sprouts
    - 2 lbs (~900g) brussels sprouts
    - 1/4 cup (56g) oil
    Dressing
    - 4-5 scallion whites
    - 4 tablespoons (60g) lime juice
    - 3 tablespoons (45g) fish sauce
    - 2 tablespoons (26g) sugar
    - 2 tbsp chili oil + 2 tbsp chili oil sediment (modulate depending on spice tolerance and heat level of your chili oil)
    Garnish
    - 1 cup (130g) roasted peanuts
    - 1 bunch cilantro, leaves and tender stems

    FURIKAKE SMASHED POTATOES
    Potatoes
    - 2 lbs (~900g) small baby potatoes
    - 2 tablespoons (20g) kosher salt (1 tablespoon table salt or fine sea salt)
    - 1/4 cup (56g) neutral oil
    - 1/2 cup (~50g) grated parmesan, divided (2/3 + 1/3)
    Furikake
    - 1 teaspoon kosher salt (1/2 tsp fine sea salt or table salt)
    - 1 sheet nori, cut into very fine strips, 1/4" x 1/2"
    - 2 tablespoons (20g) toasted sesame seeds
    - 1 teaspoon smoked paprika
    - 2 teaspoon powdered sugar

    MEXICAN STREET CORN GRATIN
    Corn
    - 3 tbsp butter
    - 1/2 large red onion, finely diced, divided (2/3 + 1/3)
    - Salt to taste (I used ~1 1/2 teaspoon kosher salt total, or 3/4 teaspoon table salt)
    - Freshly ground black pepper
    - 1 teaspoon ground chipotle
    - 4 fresno chilis, finely diced (~95g, sub jalapeno for more spice or bell pepper for less spice)
    - 750g (~5 cups) frozen whole corn kernels
    - 3/4 cup (200g) sour cream
    - 1 1/2 cup (180g) grated mozzarella, divided (1 cup + 1/2 cup)
    - 1 tsp sugar
    Garnish
    - Cilantro leaves, lightly chopped
    - 1 1/2 cup (200g) crumbled feta (cotija is better but can be hard to find)
    - Ground chipotle powder (sub smoked paprika)
    - Lime wedges

    Finally made all four! These sides are so fresh and lovely. I will say the corn gratin and brussel sprouts were also excellent sides to latkes for Hannukah. So you know, versatile for different holidays!

      Cora!!!! I didn’t think anyone would be making all four dishes. That is amazing. Aren’t the sprouts and corn gratin so good? If I had to pick favourites, it would be those two!

      Oh the sprouts and corn are top picks for sure! But then the honey carrots… and the crispy potatoes are so good too! Hard to pick a favourite!

      Thank you so much Mary! I'll definitely be making more savoury cooking videos in the future. Next "curry" one will probably be recreating my favourite curry from my favourite restaurant. It's this super coconut-y Hong Kong style beef brisket curry and it's just divine. I want to figure out how to make it at home!

    My husband and I made the Smash potatoes and they are AWESOME! We also bought the rainbow carrots I'm going to make the sumac carrot dish tomorrow night. Love your recipes; keep up with posting videos of new dishes

    The brussel sprouts were great!! At first I was worried it was too much fish sauce but it turned out to the perfect amount! My family and boyfriend both loved it- and they don’t usually agree on tastes. Thanks Sheldon!

I always like to do so when trying new recipes - make it one time following the recipe to experience the recipe developer's original intent, and then tweak to my taste after that.

    I’m finding this really late, but just as a head’s up for anyone finding it even later than me - those potatoes are delicious, but Parmesan isn’t vegetarian so you’ll need to sub in another cheese - I’ve found standard supermarket ‘Italian style hard cheese’ works well

      It'll be so good with broccoli! Crank the heat up and let the broccoli get charred. It'll be delicious with the sauce :)

    Oh, it's like you were at my Christmas dinner this year. LOL, just kidding. I do something a bit similar with roasted carrots but not with sumac (although I LOVE sumac) I roast my carrots with S&P, and honey and drizzle with a pomegranate syrup and serve with salted roasted pecans or walnuts. It's the first sauce I start on Xmas day and simmer on low heat all day. I make it using pomegranate syrup, port, salt, pepper, one clove, and one star anise. It's thick, spicy, and coats the carrots so well. So delish!! I will definitely try this version! Also your elote gratin looks amazing!! I also do a similar dish but not mexican style per se, it's more creamed corn style but with a bit more flair. I start with President's Choice frozen corn and jalepeno mix, sear it till the corn is charred, then add cream cheese, sour cream or crème fraîche, if I can find, and when melted together, I then add S&P, red chilli flakes, asiago, parm, and romano cheese and squeeze some lime when serving.

    What a great line-up! Quick question: have you worked with pomegranate molasses at all? It just seems to me an obvious choice for the carrots rather than balsamic (which I also love), not least because you find it often in middle eastern recipes where there's sumac... Just a thought. Can't wait to try these!

      I just added a comment, that I do a very similar roasted carrot dish and drizzle with pomegranate syrup I make with the PM, port, clove, & star anise and then top with salted roasted pecans or walnuts

    Hi,Sheldo I read several of your recipe’s and you made it so easy especially the whipped cream one. Would you consider one on “creaming butter” to make a cake, I’ve given up, either over or under beaten it. Every. single. time. In the brussel sprout dish is there a substitute for the fresh coriander (cilantro)? Greetings from Australia:)

    Just finished getting through all your videos! This was the last one for whatever reason. I made the bang bang chicken (had to use gochugaru and missed the MSG - new ingredients to be bought for the pantry!), chocolate chip cookies, miso caramel bars (my brand of white miso has pineapple undertones, so this came out a bit funky but still delightful), cheesecake (opted to omit the dye and just went plain vanilla), and the brussels and carrots (subbed balsamic for sherry vinegar) from this video. I was a bit intimidated by some of the other baking recipes haha 😥. Your production quality is superb and belies your channel size. Is there anywhere I could support the channel aside from subscribing and liking the videos? A patreon or ko-fi for instance? If there was one point of critique I might have, it would be that the intro’s bright music can interrupt the relaxing music and voice. Thank you for putting out such high quality content!
