The pudding or the butternut squash (as Dan calls it) is actually an Indian dessert known as Sheera (Marathi) or Sooji ka Halwa (Hindi) made with lots of Ghee (highly-clarified butter), Sooji (Semolina), Sugar and Yellow/Orange food coloring. Sometimes you get it with added dry fruits and nuts like raisins, almonds, cashews, etc. It is the most consumed dessert item in India's Northern, North-Western, South-Western, Central & North-Eastern belts.

    Greetings From Mumbai
As you were travelling on Konkan Railway region, here the trains speed is Limited to Max speed of 110 to 130 KMPH due to the Terrain.
You will find the video on youtube of how Konkan Railway route was constructed.
Thats why the train was not Making the mark of 160kmph, but if you want to feel the real 160kmph speed then you should visit North India for boarding 12049 Gatiman Express.
Have A Good Day and Enjoy Goa, Cheers!
