  • Now it's time to test if beer can be made even fizzier with the addition of carbon dioxide.
    Not the most successful of the carbonation experiments. After making the video I tried to drink the carbonated beer directly from the sodastream bottle and it basically dumped all the carbonation out instantly resulting in a jet of foamy beer shooting out my mouth.

    Leave a can open in the fridge overnight then test if the sodastream restores it to fresh sparkling beer.

      It will absolutely recarbonate it (lots of breweries force carbonate in a similar method to this). The problem with it sitting overnight is the oxygen exposure will oxidize the beer and make it stale. It will recarbonate but won’t taste good.

      I agree, my room mate got one of these and uses it all the time. No way would I want to test these things for myself. So we let Clive do it for us so we can see the results.

    I make my own beer. I once had a batch fail to carbonate. Tried carbonating it in my SodaStream and it was kind of a mess just like that. :)

      For forced carbonation of beer (kegs) you usually have to hold it at pressure for 2-3 days. If you over carbonate then you just pour foam out of the tap :)

      I began to make my own beer once. We realized we did not have any bottles, and the shop was closed, so we had to buy a bunch of beer, then drink it in order to get the bottles. Then we got so drunk we could not make the beer. It just ended up a huge mess with a few drunks passed out. Possibly not my finest hour. Never did actually make beer.

      @@MichaelOfRohan I was about to say CO2 literally produced via fermentation how do you ferment without getting gas?
      I make shitty prison wine from oranges sometimes and it makes TONS of gas.
      Now failing to retain carbonation, that's a whole different thing.

    During summertime, I make my own ginger ale. The trick is to use 2L plastic soda bottles. They can withstand an enormous amount of pressure and usually will just deform (get a lot taller) if the pressure gets too great. During Prohibition, Grandpa brewed his own beer and fermented it in bottles stored in a shed. Grandma said that the symphony of exploding bottles was an experience that she didn't care much for.

      I used to do this. Problem is that when they do go, they go _bad_. I knew some scuba divers whose idea of recreation was to pressure test those bottles. Some of them would happily take ridiculous pressures, but some would go off like bombs. I had one bottle of ginger beer which I didn't keep a close enough eye on and it developer pressure lines around the neck, went _ping_ if you tapped it, and I was genuinely concerned that it would injure me as I released the pressure. (Worth it, though. Proper ginger beer is great.)

    Hey Clive. I'm not sure if you're a coffee guy, but "High Brew" makes canned coffee that has a thermite heater in it. You twist the bottom to activate it, and it heats up the coffee.
    Idunno I thought maybe that would be something you'd be interested in showing. They're out of stock now, but there's a wait-list.

      There was something similar for Nescafe or a similar outfit for sale in the UK about 20 years ago. It wasn't very popular and got withdrawn from sale a few months later.

      Brings back memories of the Stainless Steel Rat books - he had a bit of a Thermite fetish..
      And its not particularly unsafe, you just work out the temperature you want and then calculate the charge size you need to get to that point..

    Now, however, I'm left with the question can you re-carbonate beer after it's gone flat and will that make it taste good again?

      By the time it goes flat it will have oxidized and potentially skunked as well. You can restore the carbonation but it won’t ever taste quite right again after oxygen exposure.

      @@ferrisr I've drank some really dark beers the morning after a drinking session and they still taste pretty good but are no longer fizzy. However, I would imagine the viscosity would be problematic

    Now I'm wondering if you could use the sodastream to recarbonate carbonated drinks that have "gone flat" and lost their carbonation.

      Yeah, definitely. Soda is literally just sugar and hateful chemicals that are carbonated. You'd just be re-doing what they already did once

      As long as the fluid itself isn't stale or old, it should work. However, the soda stream has a pressure relief that can get clogged and stuck if you put anything other than water in it. In layman's terms, "pressurized vessel full of soda explodes violently."

    Many home brewers have done worse with secondary fermentation. I did a cider once with a little too much sugar as i bottled it. It tasted great, nice and strong, but i had to open each bottle in the laundry sink. A 750ml longneck would magically reduce itself to about 300ml of hangover juice in the space of 10 seconds.
    I was a lot mare careful after that.

    A long time back I made elderflower champagne and stored the screw top bottles in an old coal bunker that I thought would be cool enough during the fermentation period.
    Clearly not as I came home to find the bunker had been recoated on the inside - but there was that lasting wonderful aroma of elderflower.
    I could only dream of it's taste!

    Brewing beer with my roommates we once over calculated the bottling sugar. Roommate added twice the recommended amount. A week later we couldn't open the bottles with a gushing foam over, losing almost half the bottle. Our solution was placing the bottles in the freezer for 20+ minutes. After that they opened just fine. We used Grolsch pop top 16 ounce bottles. Fun times.

    I think you need to revisit this. I did this to a couple beer that were lower on the fizzy scale. I was quite happy with the results.

    A suggestion: use a straw for testing liquid when the foam is so foamy. Yeah it’s not the right way. But you are trying to carbonate something already carbonated. Just sayin’. Love your stuff Clive!

    You can make foam on beer or soda settle faster by rubbing a finger on your nose and then touching the foam. The oils on your skin can make the bubbles pop faster, and noses are a fairly oily patch of skin on most people.

    Breweries and home brewers force carbonate beer all the time. It means you can drink it a lot quicker than doing secondary fermentation to produce carbonation. Typical beers will have about 2.3 volumes of co2 per litre of beer but some styles go up to about 6 and you have to have super thick bottles for those.
    Tips when force carbonating are squeeze all the air out - you're doing it on foam which is fine. Then for pouring have the glass super clean and cold.

    My father and his friends used to carbonate home made beer by adding around 40psi CO2 to a sealed container if I remember correctly.

    As an American, I love the Glaswegian accent and lingo ("a wee bit") haha Something I would have tried is using the "nose oil" trick I learned in college (if you have oily skin, wipe your finger on your nose and then swirl it around the foam) which almost immediately breaks the surface tension of the bubbles and kills the foam.

    Hi Clive, you could have removed the carbon with a vaccum pump first and then add it again later :) . (I got my vacuum pump for about 170€ at amazon and its safe and doesn't require oil.....gets down to -0.85 BAR and its fun for lots of experiments. You can do room-temperature alcohol distillation for example ;) preserves the flavors too)

      I was looking at a scientific tool called a rotovap that's designed for vacuum distillation but those little beauties cost an arm and a leg!

      @@seanrh4294 ok, thanks for the info, it's a very cool setup, figuratively and literally! That's what I want to try this setup, I want to preserve some of the more fragile scents and flavours. Galangal was one possibility. So the trap would be between the vacuum chamber and the pump?

    I did a beer kit once where I bottled it too soon. Not too soon as to cause bottle explosion but when you opened a bottle you had to do it outside and the cap would go flying, even the fliptops. But once decanted into a glass it was very refreshing.

    I tried this 20 years ago when a friend worked as driver for the famous Hobräu in Munich, he came with his beer truck and I could fill a nice 10l glass container. Unfortunately we didn't managed it to drink everything this evening so I had to "sodastream" it the next day.
    It was an unbelievable mess (pro tip: bathtub)but tasted great

    This makes me happy I have an older SodaStream where the bottle screws in, and I don't have to hold the gas injector mechanism down to keep things under pressure. I can do a triple fart, then just let go and let it sit a while. Then my pressure release is a press-to-release-the-pressure lever that I can gently release in steps rather than Clive's release-to-release-the-pressure mechanism.

    I do hope you continue the series with a new carbonation device. But can you really, truly replace the memories created by such a brave and hard working soda stream?

    That froth is created by a product called Tetra Hop. It’s a product made from hops that’s designed to improve foam stability

    I reckon you might be able to turn that into a product, come up with some spin about the foam improves the flavour by releasing beer gas into your nasal passages as you drink and you can charge a fiver for a glass of beer foam with just a few millilitres of actual liquid in it.

    I'm not sure if the led matrix was specifically chosen for this video and I don't think it was lol but it is fitting. The yellow LEDs pulsing randomly remind me of the carbonation in a beer.

    Here's an idea: Jerry rig a whipped cream dispenser to make nitrogenated alcohol (or can you stick nitrous cartridges in the soda stream?)

      I think you'd need something creamy or the bubbles wouldn't stick around. There's a reason why nitrogen is used for whipped cream and seemingly nothing else. However, "will it whipped cream" is just a great idea

    What are those big reels on top of your electronics drawers? They look silvery in the video but I've never seen solder in reels that big.

    2:52 you know, some fancy bars sell foam in a Champaign glass (or a snifter). its supposed to be foam with some kind of essential flavor chemical added like benzaldehyde (cherry flavor)

    One thing you may want to try with clean hands is skimming the top of the foam with your finger. the salt dissipates some of the foam anyway.

    The Drinkmate is a SodaStream knock-off which explicitly supports carbonating any beverage not just water.
    Not sure how SodaStream works but on the drinkmate the release valve is a separate part, it still makes a mess but it's not too difficult to clean.
