How can you move the part during scanning? The part should stay stable while probing but can move while scanning, how can this happen?

When probing or scanning, you do want to keep the part stable, that is correct. The reason he is able to move the part in the video is because of the 8th axis, which is like another axis of the arm. Once the FARO 8-Axis is calibrated, it will compensate for the movements of any part on top.

What is the accuracy of the scanning/probing? Is this ISO certified?

Accuracy levels differ depending on size and model, but a 2 meter S model has a probing accuracy of 28 microns. And the Quantum Max arms are certified to the highest standard for portable arms - ISO 10360-12.
