Actually I would prefer parsley instead of coriander as parsley is more typical and frequent herb in Portugal. But in overall this recipe is perfect. I especially admire the prawn stock!
as a Macanese like me , I would suggest you put more seafood , such as clams , scallops , white fish etc so when you're making broth , you can use the fish bones the skirt of the scallops to make it richer but so far , I'm quite like your recipe
You forgot red bellpepper in your recipe and keep out sugar. And for the real thing you need crab and razor clam. And where are the clams ? Do not use mussels, because thats for spanish paella. And to get more taste you need seafood broth.
Just sharing my home recipe so I wouldn’t say this recipe is the traditional/ original one! 😊😊 I just used whatever seafood that was available at the market that day.

Instead of water, add fish broth or better - seafood broth or both. Especially "Seafood broth" is possible to use from cubes. In Portuguese: Caldo de Marisco. Water has no taste. And if I may tell you another tipp: Use Italian tomatoes from can. But take care, that there is no citric acid inside. They use it for peeling the tomatoes and that´s a bad taste in the food. So take the more expensive ones (Mama or such) and if you can get real good canned tomatoes, buy tomatoes from "San Marzano" - you won´t believe the difference. You open the can and you feel a great smell of fresh and fruity tomatoes. Canned tomatoes are ripe and freshly canned more or less beside the field, right after harvesting. But one thing is great: Your seafood rice is perfect looking at the end on the plate. Color, kinda liquid and such - but please try once my suggestion. And if you like, I can also give you my secret Frango com PiriPiri recipe. (Chicken piripiri

Mussels is Paella but not Arroz de Marisco or Arroz de Tamboril. You just don´t find it in this food in Portugal. And Mussels is also not a typical portuguese ingredients, but clams are. And sugar should not be found in this food.. whatfor ? As a bellpepper substitute ? Bellpepper is basic and gives the typical taste. I think, you cannot take just some rice and seafood and call it by the typical portuguese name. If you are making a blackforest cake, you are taking framberries instead of cherries ? You can, but then it is not a blackforest cake.

I used risotto rice😊😊 coriander will defo add more flavours to it but surely you can leave it if you don’t eat coriander!
