How to make Thai Pineapple Fried Rice w/ Chicken & Shrimp 泰式凤梨炒饭 Super Easy Fried Rice Recipe

  • This looks like a difficult and fancy style of fried rice. Cast aside the step to prepare the pineapple bowl, actually this pineapple fried rice is super super easy. Couple this recipe with our pandan chicken recipe and you have an exotic meal set. Yum!

    Ingredients:
    Serves 4 pax
    120g of chicken (marinate with 0.5 tsp of cornflour & 1 tsp of light soy sauce & some white pepper)
    100g of prawns (marinate with 0.5 tsp of cornflour & 1 tsp of light soy sauce & some white pepper)
    Overnight rice - cooked from 2 cups of raw jasmine rice (1 cup of rice = 159g)
    2 beaten eggs
    2 tablespoons of light soy sauce
    0.5 teaspoon of turmeric powder or curry powder
    1 teaspoon of chicken stock powder (or 1 tablespoon of oyster sauce)
    3 pieces of shallots - thinly sliced
    3 cloves of chopped garlic
    100g of pineapple
    24g of raisins
    30g of unsalted roasted cashew nuts
    1 teaspoon of salt (or to taste)
    A few dashes of white pepper
    Other ingredients
    ----
    Pineapple boat (optional)
    Pork floss

    this is literally the first dish i ever cooked back in my sec 1 food and nutrition class, which ultimately kickstarted my passion for cooking. any secondary school kid who follows this recipe closely and present it in the 'BANANA' bowl to the teacher is definitely gonna get an A

    Cutting the pineapple was such a tough and dangerous job. I wouldnt even give it a try. Even tougher than the whole cooking process. The recipe looks great n simple. Thxs for sharing.

    Thank you for the detailed info regarding cutting of the pineapple. I prefer my pineapple for this dish to the sour side. I tried it once at a Thai restaurant and it was too sweet and I doubt it was canned because it didn't have the taste of canned pineapple. For other dishes such as rojak sweet pineapple is fine.

      @@spicenpans ​@@spicenpans I love how you garnished the dish with pork floss - this is how I like it to be presented. Most restaurants don't do that and just put three prawns on top of the rice.

    Love to try this recipe. When u say 159g rice is this uncooked or cooked rice? And sorry just to clarify did u use 2 rice cooker cups of rice to boil the rice or 2 normal measuring cooking cups?

    Really nice recipe but creating that pineapple boat was such a huge amount of effort and at times rather dangerous looking, I would give that a miss, thank you for showing us though.
