  • Pares, also known as beef pares, is a term for a serving of Filipino braised beef stew with garlic fried rice, and a bowl of clear soup. It is a popular food particularly associated with specialty roadside diner-style establishments known as Pares Houses that specialize in serving these type of meals.
    PARES
    1.5 kg beef brisket
    1.5 kg beef shank (optional)
    1 large onion
    1 bulb garlic
    ¼ cup ginger (minced)
    ½ tbsp cracked pepper
    ½ cup soy sauce
    5 tbsp oyster sauce
    3 tbsp fish sauce
    3 tbsp sugar
    3 pcs star anise
    3 pcs cinnamon barks
    2 beef cubes
    2 liters water
    ¾ cup cornstarch
    GARNISH
    Spring Onion
    Toasted garlic
    FRIED RICE
    7 Cups rice (left over)
    1 bulb garlic
    3 tbsp cooking oil
    4 tbsp soy sauce
    BONE MARROW
    6 pcs beef bone marrow
    Olive oil
    Salt
    Pepper
