For example my chef would put the "Salt/Sugar" he also used a bit of "Mirin" as well he would leave some "Seaweed" in the bucket this would "Flavor" his sushi Vinegar I think he used Rice Wine Vinegar as well. You want to make sure the net is placed inside the pot after the soaking period and before you start the cooking process. Leaving the net on the outside of the pot during the cooking process will result in a melted net. Hope this is helpful.

So you dont need sugar only vinegar?
The vinegar is sushi vinegar and already has salt and sugar.
I think you said don't cook the rice in the net because it will melt the net but you cooked the rice in the net. Please explain.

Many Asian grocery stores carry such nets. For home use, it probably isn't necessary.

Pouring the sushi vinegar into the metallic rice pot is not a good idea. Vinegar would react with the rice pot...
