    Charcoal Chicken BBQ Recipe:
    I showed the method in more detail in the video, but I will type everything out for a quick reference if you’d like to try it. Feel free to use the sauces in smaller quantities just on your regular grill for your family as well. It’s delicious.
    White Sauce:
    3 c. water
    12 c. vinegar
    3 tbsp. worchestershire sauce
    1 ½ lb. butter
    ½ c. salt
    Red Sauce:
    ½ lb. butter
    1 ½ c. brown sugar
    16 oz. ketchup
    For a 40 lb. case of chicken, and a rack of potatoes and onions, I make 1 batch of white sauce and 4 batches of red sauce.
    Cook chicken for approximately 2 hours over hot white coals. Turn every 30 minutes. Spray with white sauce every 10 minutes. Sprinkle liberally with pepper at some point. Baste with red sauce on one side in the last 20 minutes. And then the other side the last 10 minutes. Remove from heat and place in a foil lined ice chest. Josh likes to time it so the chicken is pulled off the grill about 2 hours before we want to eat.
    Then he reloads the grill with cut potatoes and uses the same method. This takes another 2 hours. Time it so they are done right as you want to eat, or you can store them in a foil lined ice chest until you are ready to eat. This helps ensure the potatoes get nice and soft.

    The marinade sprayer is an ingenious hack! I’ve used reg spray bottles in the past for liquid marinades but they were a pain and often clogged. Never thought about the pump sprayers! I’m going to buy one ASAP. Don’t know if you know this tip about cutting onions, but if you put them in the freezer beforehand, 15-20 mins, depending on size, it will block the burning fumes. Works great for me! I put them in ziplock bags to prevent my freezer from the onion smell. 😊
    I’m definitely trying both of those chicken marinades, too! Looks amazing! Thanks!

    Hosting gatherings is a delight of mine and i loved hosting along with you in this one! As a hutterite I cook for large amounts of people regularly and i've made the chicken on coals every summer but never with spraying the white sauce and letting it rest for 2 hours...I'm really excited to try that! Looks amazing!

    Tip for cutting up onions: rinse off your hands/onions periodically under cold water as you cut it up, and you won't get so teary-eyed!😉 This was such a fun video to watch!

      The cold definitely works! I put mine in the freezer for around 10 mins or so before cutting and never deal w/burning fumes. Great tip! I’ll do that the next time I forget to them in the freezer ahead of time. 😊 👍

    I actually have no one to call family...
    I sometimes feel terribly lonely
    All i eat is some rice+yogurt and potato wedges
    Recently graduated and got a job and went for real grocery and staple shopping and got some meat and frozen veggies..
    And wanted to cook it
    While i randomly got a thought of how fun it would be if i had a family..a big one..

    Cornell marinade is what I grew up with here in Western NYS, and is similar to yours. Vinegar, vegetable oil, salt, poultry seasoning, plus a few other spices/herbs, and is SOOO good!! It was invented by a professor in the poultry dept at Cornell University. When places advertise a chicken BBQ in this whole area, THAT is the chicken you'll get, and it doesn't disappoint! I would imagine the butter would really add a next level tho!

    Add the sugar while the tea is hot so it is no fail. Great cookout!

      I usually put my sugar over the ice and dump the tea hot water over it. No problem with sugar hardening. Add cold water to fill your confainer.

    The trick I used to not cry with onions is I light a candle nearby and for some reason that works. I saw that trick on Paula Deen show.

    You might want to consider making a simple syrup for your sweet tea. Basically, you're just dissolving the sugar so you don't need to stir it forever. Equal parts sugar to water, but I would just use a few cups of boiling water to the sugar and dissolve it before you steep the tea.

    I think you could have added extra sugar to the sweet tea by using either honey or powdered sugar. Both dissolve directly in water.

    Trick to onions not making you cry- wet s paper towel and but it’s down next to onion you are chopping. I just learned this and it worked for me! 🤷‍♀️

    I’m glad your had your hubby help with the oven door cleaning. I actually tried it myself after seeing it on Pinterest and almost hurt myself when the spring inside snapped the inner part toward me. Then of course lost the screws and basically broke it. Had to get the repairman over to fix it since I have a complicated oven. Great video and enjoyed all the cooking and adorable kiddos.

    Everything looks soooo delish! My southern roots were wanting Red Diamond or Luzianne for the tea bags, though. Lol Have you heard of ice chest tea? There are several variations I've had but the basic recipe has tea, frozen orange juice, lemonade &/or frozen limeade, sliced oranges & lemons & a bag of sugar. It's all mixed together with a bag of ice in an ice chest. Sonic or Braum's ice is the best.

    This was encouraging to see how you host others. We do bbqs for various people throughout the summer. A few days before I’ll put up a disposable fly trap out to attract all the flies around my home so there’s less flying around the day if the bbq when people are coming in and out of my home. The ones from the brand Rescue where you add water work really well. They just stink so I put them where I can’t smell them 😅

    Looked like a fun time! BBQs and hospitality is a lot of work (but worth it). The Walmart tea bags are the only ones I use for iced tea.

    Put a wet wash cloth near the onion while you cut them. It works very well! Your eyes will be amazed.

    Don’t cut the root of the onion until the very last it will help tremendously with the odor and it making you tear up. I learned that from chef Ramsey Gordon watching his videos

    Miller is absolutely adorable! Y'all done a great job, all of the food looked so good! 😋 Would've loved to have been there, y'all are great hostesses!!
    Whenever I make sweet tea, to prevent anything sticking to the bottom of the pan, I pour my sugar into whatever container I'm putting it in and then the hot tea and then stir it all up. Never sticks and then you don't have to keep stirring it.

    Hi Megan, such a fun video to watch. The chicken really looked delicious and you can always get me with a great dessert, so the Dessert Buffet would have been perfekt for my sweet tooth. I personally do not fully get the single use silverware and plates. My mum used to keep old white plates, several glasses and the silverware from my grandparents in the basement and got these out whenever she was hosting. After the party she runs everything through the dishwasher. When we meet for a Barbecue with our Orchestra, everybody brings own silverware and plates and takes them home again later. Really love that but I fully understand that no host wants to ask their guests to bring plates and silverware. Miller is such a sweet boy with his big interested eyes. His eyes look a lot like Josh. And also Evonnie and Fletcher Seem to be wonderful kids. You're doing a great job! 👍🏻 Regards from Germany Stephanie

    I loved the video! Looked so fun! Our BBQ restaurants here in Alabama serve white sauce to go with their BBQ whether it be for pork or chicken. It is sooo delicious and tangy and makes it perfect. We also have the regular BBQ sauce too. I didn't know that that far up the United States did sweet tea and white sauce. Interesting that y'all do. You and Josh make everything look soo good! Thanks for sharing with us. You're one of my favorite UA-camr's.

    Silverware at the END! That way when you discover you've forgotten it altogether, you don't have to disrupt the entire line to get it. 😄

    When you make your sweet tea, I suggest making some trays of it to freeze. So, when you serve it, you will not be diluting it with plain ice cubes. Everything looks very yummy. Glad it was a success! God bless you and your beautiful family!!

    What a fun party with friends! I'd love to try out the sauce Josh basted your chicken with. Chicken thighs are so flavorful on their own and your sauce put it over the top. Homemade barbecue sauce sounds awesome. Looks like the kids had a blast too and your guests brought delicious treats. Thanks for sharing. 💖😊
