Many meet me in Middle town as a group, or at Cycle Gear in Santa Rosa. I am due one more trip to Santa Rosa for the year so looks like I should get in scheduled mid November.
That video is misleading, The older gentleman with the adventure set up had a 701 enduro (its a factory offroad bike already. The younger gents at the track paddock, and parking lot had the 701 SM street variants.
That is a shame that you have not found a setting that works for you with this motorcycle. Many seem quite happy once sag is set (..and yes, the rear shock is very soft).

Buying a 701 SM and turning it into an Adv bike?!? Why not buy the 790 Adventure then?!
If 10-30% of the total use is off road, then slight modifications make sense.

There are no amount of clicks that will fix the terrible suspension on the 701
