- These green tea cupcakes, topped with lemon buttercream frosting are inspired by the tea flavored desserts that are popular in Japan. Green tea desserts are made with matcha powder, which is a mixture of fine ground green tea leaves.
Green Tea Cupcake Ingredients:
1 1/2 cups all-purpose flour (180g)
1 cup sugar (200g)
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tbsn. matcha powder
1/2 cup unsalted butter (120g), softened, cut into 1-inch cubes
2 large eggs
1/2 cup milk (120mL)
1/2 tsp. vanilla extract
350F/180C, 20-22 minutes
Lemon Buttercream Frosting Ingredients:
1/2 cup butter (120g)
1-2 tbsp lemon zest
3 cups icing sugar (300g)
3 tbsp lemon juice
1-2 tbsp milk

Hi Trisha, I checked out that video and I have no idea how they did that! Glitter that is edible would most likely melt if it was baked, and edible glitter is usually used as a decoration on top of buttercream (or within it). Large chucks of sugar etc would melt, as would sanding sugar, which could give it the shine as seen in the video. Due to the fact that it is a promo for Kate Spade, I would guess it is artificial.

Yes, you can...I usually use salted butter and keep the salt in anyway...but you don't need to.

You can use which ever butter you prefer. Using a GF flour substitute should work just fine.
Can I sub the butter for solid coconut oil? Will it make it less dense

Hi Trisha, I saw this comment and thought "Wow, what a cool cake" and thought I'd check it out for myself. Personally, since the piece of cake was already cut, and we never saw them actually put the for into the cake, I think they just cut it, powdered it with edible glitter, and then placed it back in where they cut it from.
The tea is fairly pricey here too, but you only need a small amount of it. This powder is for baking and is different from the tea that it is tea bags, so I don't suggest you use that.

I'm not sure what you might be doing differently...just follow the steps that I have shown for you, and everything should work out!

Unfortunately with this recipe, I wouldn't do that substitution. If you want to replace the butter, try an equal amount of margarine, or solid vegetable shortening (lard).

asian supermarkets usually stock green tea poweder. it's not really matcha as it's not ceremonial grade, but it's still green tea in powder form and for cupcakes it works fine :)

I got this scoop through Pampered Chef...which do home based parties.
The moisture level of the cake has nothing to do with the appearance of the batter. Cakes that are baked from scratch are often thicker than box mixes. If you want moist cakes, watch your baking time very carefully, and try experimenting with fillings, which add moisture to the cake...simple syrups, or fruit etc. If you were to make this cake with brewed green tea, you would be sacrificing the flavour of the matcha powder.
They are for people of all ages.

As far as I know, the green tea in tea bags is in leaf form, so no, that won't work. I get the matcha powder at the local health food store.

I'm not sure...I've used a powdered sugar replacement before with these, but never a liquid one. The best way to find out is to try....if you do, let me know how it works out.

This is actually a VERY close recipe to Kochka, a traditional Korean green tea cake. They usually serve it with a honey-ginger buttercream-style frosting, or a basic cream-cheese frosting. Very fond of green tea in anything!
I wanted to make it back in cooking class for the "cupcake wars" but my teacher didn't find the matcha for the green tea cupcakes :/ so I ended up helping my classmate with the coca cola cupcakes but we didn't win the cupcake wars.

Can you do a matcha buttercream recipe? I drink matcha tea at home, and get the lattes and frappuccino's from Starbucks on a regular basis - so I actually would love an all green green tea cupcakes version. Instead of the zest should I use matcha powder, and instead of lemon juice should I use matcha tea?
