    In Puerto Rico cassava is called yuca, we eat it boiled with some salt in it. We also eat it fried, but I never knew you could eat the leaves. Another thing Africa is teaching us. Thank you Chef Justin.

      Good. In Africa we got 4 to 5 or 6 ways of Preparing both leaves and roots.
      We can do your way.
      And we can cook roots half way then soak it in water 4 2 weeks. Becomes soft and wash in fresh water ready to eat as a treat"Mitewe" Or pound the soft soaked Root till becomes a dow then wrap it in smoked banana leaves. For a long conservation.cheese like. U only peel hard top layer but soft In side. In past peaple going for long journey used it. It holds uor stomach for long nd stays fresh. It s called "Rowe or Bulobe" in East Africa.
      Or we dry the roots for days. When is dry, is grinded to get flour for "Ugali of Foufou" africain popular dow😉

      @Burundi Shall Smile 1Day - Thanks for the information. We also grate the raw root, season it with salt, then add oil that has been infused with achiote to make it turn red. The cassava will turn yellow. We then take a certain amount spread it in our hand, then place previously seasoned and cooked ground beef in the center, fold the cassava unto the beef covering all the beef, then we deep fry it, we call this alcapurria. We take this same mixture minus the beef and spread it on banana leaves, this time we'll use cooked pork as a stuffing, place it in the center, fold over the leaf, tie it up and boil it in salted water, we call this pasteles. Do you live in Burundi?

    We have a similar dish in Trinidad and Tobago called callaloo made from the leaves of Dasheen. There's also a variation of it in Jamaica. Wow we still have so much in common.

      We have callaloo too in Rwanda and Burundi, we call it Rengarenga. It's one of side dishes that goes with Rice and ugali

      Good.
      Well in Africa we eat both Roots nd leaves. We make Roots as treat, as flour, "Ugali" African dow.4 to 5 way of making the roots b4 eat. We can half cook then soak in Water 4 weeks, then get soft. Ready to eat. Is called" Mitewe " in Great lakes. Or can pound the soft Mitewe to make a dow, wrap in smoked banana leaves as packaging.it s for long conservation or long journey (in past, Africans used it for long travels or migration) it holds long in Stomach, u don't get hungry as fast. It matures like Cheese.the out gets hard as days go on U only peel the outside layer to reach the inside like an old cheese.or fry. We have many ways of preparing Cassava. We can make a high spirit Alcohol too out of sour Cassava roots . "lutuku or Kanyanga, or Gongo" Vodka ll look like a soft drink if u compare. Is illigal to sell it publicly in most Afrikan Countries. Governments say is unhealthy but is a scapegoat because it out win over European Alcoholic companies in my personal view. Africans still make it underground anyway.

    That’s of the main soups in Liberia 🇱🇷. Cassava leaves is awesome. I didn’t know other African countries ate cassava leaves. I thought it was only Liberians and Sierra Leoneans.

    I am from Liberia. According to our history, the Cassava leaf soup were first introduced by African Americans Returnees who return back to Africa in the early to mid 1800s after slavery were “abolished” To established a colony which is current day Liberia. In Liberia we refer to those African Americans as the “Congos people, “ to reference to the eastern/central African country (the democratic republic of the Congo) which was were they first settled before navigating to West Africa , Liberia. And as the story goes, they brought along with them the cassava leaf soup after Adopting it from Congo which is the Traditionally dish from that region. The cassava leaf soup has since then spared all across Western Africa as a popular dish for many Continental west Africans. It is eaten mainly in Liberia, Sierra Leone, the Ivory Cost, some parts of Ghana, Guinea Senegal, some parts of Nigeria, and etc. However, in most of those countries it is somewhat prepared differently.

      Great lakes is the home of Cassava dishes. We have 4 to 6 ways of preparing it. The world has never seen. I just wish they can dedicate a video on different way of making Cassava dish in our region. From treats, Alcohol to preservative food that last long months and long to digest in times of war or long journey 😉
      In Burundi our Rebels, survived on Cassava,hence the CNDD party(rulling party) has a Cassava leaf on their flag. Cassava kept them on ground where no food supplies.

      The Congo people or as we refer to them as AmeriCo Liberians are a specific group of people that return back to Africa after slavery was abolished to create a country which is now the Liberia. In short, the Congo people are enslaved African people. We have 16 tribes and has been independent for over 175 years with 27th presidents all but 3 were Congos or AmeriCo Liberians. This is why Liberian culture is hugely influenced by African Americans culture and the mixture of indigenous African culture unlike what u would see in popular African culture all across the continent

    Cassava🌿 is mostly eaten in central, eastern and western Africa it makes you healthy and strong and there's alot of different ways you can cook it very delicious.

    I use oxtail, celery, lots of onions and blend them, add habanero peppers, eggplants and salt then leave it in the slowcooker and forget about it, add oil the next day and let it cook for another 2 hours, it comes out so soft, so tasty and i have a large batch and can freeze some for later. Eat it with yuca, yuca fufu, even oatmeal fufu ( low glycemic if you're diabetic), rice, heck evene with quioa lol or my beloved kwanga lol.

    Let's be real... Chef Justin burn himself tasting that cassava Leaf soup. He played it off real well though. I never had cassava leaf but palm oil has a certain smell and taste that grows on you.

    LOVE YOU ALL CHANNEL :) BEAUTIFUL FAMILY. YOUR CHEF MAKES SOME AMAZING MEALS. THE THOUGHT OF EATING CASSAVA GIVES ME SUCH SCARE WITH ALL THE CYANIDE FOUND IN THE LEAVES AND ROOTS. MANY DIFFERENT ETHNIC GROUPS HAVE TO COOK IT FOR MANY DAYS BEFORE CONSUMING IT, TRYING TO REMOVE AS MUCH CYANIDE OUT OF THE PLANT AS POSSIBLE. IT'S ALL TO SCARY FOR ME TO TRY CASSAVA HOWEVER, KNOWING HOW CYANIDE AFFECTS THE MENTAL..

      @@RESILIENT3 doesn't matter what ethnic group to remove the cyanide u just have to put it in water. When u see people cook it for days it is just because they want to fermented it. The cyanide goes by dipping in water.

      @@africaine4889 I'VE NEVER HEARD OF CYANIDE BEING REMOVED IN JUST WATER, HOWEVER, I TOTALLY UNDERSTAND THEY'RE MANY SOURCES OF RETRIEVING INFORMATION..STILL LOVE THEIR FAMILY AND CHANNEL. AGAIN THEY HAVE AN AWESOME CHEF.
