Hey there, that is personal preference. Many people do either or. Our family boils the sauce again, adds a bit of salt to season and fresh basil to each jar. We then fill the jars, seal them and boil the whole jars to ensure they are sealed and shelf stable. Thanks for your question!

Hi there, As the motor is smaller it is always suggested to soften the tomatoes allowing them to pass thru the unit easily. If you want to do tomatoes from raw, I would suggest a 1 HP or higher motor size. The neck and auger will also be larger to accommodate the tomato. They advertise it doing 150kg per hour. Sounds like a lot because that is over 300 pounds an hour.
