All those are solid sets. One of my 2023 favorites is the Up scaled minifigure, which I think is very underrated. Solid techniques with a good mix of technic and normal bricks , 600 pieces for $50, epic resulting model
That's an excellent choice. If I owned it and built it, I feel it would have been serious contender here.
Piranha plant is perfect it should be number 2 the up house is still too good to not be 1
For me my number 1 is Tails’ workshop since I just love the Sonic brand and especially Tails. But besides that I finally got around to the Horizon Tallneck and it was great.
Honestly my personal faves from this list are Piranha plant and the UP house

Up is one of my favorite movies. Kinda wish I could afford it though.
Be diligent on keeping an eye on discounts. Another great way, is to request it for a gift, if you're asked. Should be around for quite some time (and for good reason!!).

From resellers online.
I, myself, bought them when they were still available in stores before they retired.
