  • I was keen to see how is Poha made, I visited a factory in Ujjain to see the process through which paddy crop passes through.

    It was an amazing experience to see how raw paddy crop passes through a series of steps and coverts into Poha. Process shown in this video is actually performed over 2 days...
    I also got opportunity to learn about irregular shape of Poha. Real colour of Poha is offwhilte, which is the colour of paddy crop, i mean rice.
    Any ways this was my learning and experience through this one day factory visit.
    My sincere thanks to Deepak ji -factory owner for sharing this information with us.
    I will suggest you to do your own tests and find out your own observations about the information shared and then decide accordingly.

    bhaisaab, quality ka koi issue nahi hai ki white wala bekaar hai aur off white wala acha hai..
    actually wo do poha alag alag kism hai, aur bazar mein alag alag upyog ke liye aate hain
    jo off white hai, wo Jaada Poha kehlata hai (Jaada = thicker one) ... wo variety poha banane me kaam aayega, jaisa hi sab jaante hain.
    par uska chivda nahi ban sakta.. ghee/oil mein roast hone pe wo chivda jaisa kadakpan nahi lega
    Chivda = jaisa ki diwali pe hum aksar dekhte hain, mixute type
    aur jo white hai, wo Chapta Poha (pressed one) hai
    uska chivda banta hai jo specially gujrat mein famous hai, aur Ujjain mein diwali pe ghar ghar mein banta hain
    aur haan, uska bhi poha ban sakta hai, par usko aap paani mein bhigoye naa.. sirf paani ki bunde chhidak ke kadhaahi mein daal dijiye..
    chapta wala thoda sasta aata hai,

      Sorry, लेकीन Bobby जी जो बात कर रहे है, पतला चिवडा पोहा वो अलगही होता है , उसके बारेमे ईस व्हीडीओ कुछ नही दिखाया है , सर ने जो information दि है वो दोनो सेम जाडा पोहा है , फरक इतना है कि जैसे गाव के original चावल और हम use करते
      है polish चावला जो सफेद दिखता है, हम Mumbai है यहा तो मै खुला पोहा ही लेती हु
      जो थोडा छोटा और डल कलर मे होता है,उससे पोहा अच्छा और टेस्टी बनता है .

    मै आप को बताता हु के 40/45साल पहले कोंकणमे मेरे ननिहाल मे मेरे नानीके घरमे पोहे कैसे बनाते थे.
    धानको 24 घंटे भिगाकर रखना .
    फिर उबलते पानी डालकर तुरंत निकालना.
    फिर इस धान को चुल्हेपे रखेहुए मिट्टीके बर्तन मे पकाना. ध्यान रहे की अगर जादा पकेगा तो पोहा टुकडा या आटे जैसा होगा. अगर कम पकेगा तो चावल निकलेगा.धान पकानेका एक सही प्रमाण होता है.
    तुरंत इस धानको ऊखलमे डालकर मुसलसे कुटना. जैसेजैसे मुसल के घाव लगते है पोहे तैयार हो जाते है.छिलके सुपली लेकर अलग किये जाते है. इस पोहाको एक बहुत अच्छी खुछबू रहती है.ध्यान रहे की उबलते हुए पानी मे धान इतना लेना है की जो उखलीमें रहे सके.
    आजसे 45 साल पहले मैने इस प्रक्रिया को देखा था. तिन मजदुर स्रियोंने यह काम किया था जो कुम्भारन थी और इस काममें माहिर थी. उन्हे हरेक को आठ आने मजदुरी दी गयी थी. पोहा चार पायली याने लगभग 12किलो बना था. 1969 की बात है. सोने का भाव 90रुपया प्रति तोला था.
    यह पोहे बहुत स्वादिष्ट बनते थे. यह घरमे बने हुए पोहे जिसने चखे होगे तो उसके सामने मिल के पोहे कुछ भी नहीं. मेरा ननिहाल महाराष्ट्र में मालगुंड गाव जिल्हा रत्नागिरी यहा गणपतिपुले नजिक है.धन्यवाद.

    Wow!! Great to see the video, happy to know about the qualities, but we use that white pressed poha to make CHIWDA OR MIXTURE..I have been to Ujjain & sae=w many hotels full with POHA & JILEBES...Delicious .....never else seen in anywhere else !!!!......JAI MAHAKAL!!

      Jai Shri Mahakaal... Poha and Jalebi you find every where in Ujjain and Indore....I got one packet for my home....we cooked it and found major difference in taste even with our Delhi style cooking... it tasted so nice and fresh...

    good information. My entire family eats poha and we always struggled to get decent quality poha in Mumbai. next time, I will search for a quality supplier poha. maybe, diamond brand which you have shown. thanks. I regularly watch your channel and enjoy food stories.

      you are right, it was not easy, after speaking to 3-4 people i found success in convincing Deepak ji, any ways seems my salesman ship helped to put across the point to convince him for video of factory visit....
