There are several ways to scare at a haunt in a way to keep yourself safe from physical reactions and the "fight" element of our fight or flight reactions. The biggest (arguably) is to never scare from the front. Always the side or behind. And distance from your intended target is your friend. I say intended as getting a scare from someone you weren't targeting is incredibly rewarding.

I did a couple haunted things while I was in high school. None of the ones I worked at allowed any kind of contact from the employees or the customers. If someone attacks someone else, they are escorted out of the event by bouncers that are either also in costume or someone is monitoring all the locations via CCTV.
Taking a job like this you are warned ahead of time that it could happen, although it is rare. You are also told that if someone attacks you, that you should disengage, they basically just want you to run, not "defend" yourself.
The times I've done it, I've never seen it happen. I'd like to know what kind of dumb ass goes in to a haunted house and then hits the actors, that's beyond ridiculous.

I got full-on kicked in the eye by a little kid when I worked a church’s haunted house. I just rattled some trash bags near her and she Lionel Messi’d me straight to the eyeball. I know church haunted houses aren’t anything professional, but damn, you gotta go over the rules with your kids before you just assume they have the in-the-moment emotional regulation to know how to handle a scare, you know?
