How to make Memphis style BBQ pork. Pork recipe
What a wonderful way to enjoy excellent BBQ without breaking the bank! These turned out exceptionally well, and I'm not promoting the Rendezvous products what so ever, but If you are looking for some excellent rub and BBQ sauce for your next BBQ, then you really should check these products out! Ingredients
Vegetable oil 2 Tablespoon
Pork steaks 5
Seasoning 6 Tablespoon, Rendezvous famous seasoning
Barbecue sauce 6 Tablespoon, Rendezvous
Directions
GETTING READY
1. Prepare the Mojoe Griddle and heat it up.
MAKING
2. Grill the pork steaks on the griddle by flipping and cooking on both sides. Cook until the steaks were perfectly brown on both sides and a crust is formed.
3. Take the steaks off heat and wrap them in an aluminium foil and let it rest.
4. Place the steaks on the grill grates and cook on indirect heat. Liberally sprinkle rendevous famous seasoning on the steaks. Cook at 240 F grill temperature.
5. After about 45 minutes of cooking. Stack the steaks on top of each other and place a water pan at the bottom of the grill. Cook until the internal meat teperature reaches upto 190 F.
6. Spread barbecue sauce over the steaks. Cook for 10 minutes, flip and sauce the other side as well.
7. Cook for some more time and then take the steaks off.
SERVING
8. Place the steaks on a platter and serve.

After watching this video, I ordered that rub and received it a few days ago. I'm currently smoking some chicken thighs using the rub and using my Traeger Grill. The smell is out of this world!!
I can't believe you didn't have a missing pork steak at about the 3 hr mark. When you were pulling the steaks off the grill, you could just see the meat and bone pulling apart. Must have been so tender!!! Then add the sauce and we have a party in our mouth!!! Wow Rus, you nailed it brother!!! Great looking cook dude!!
Yeah that steak sliding is a good testament as to how non stick the Mojoe griddle can be if maintained properly. Oh man yeah, they turned out perfect, and had insane flavor! I'm going to be doing these again real soon. Thanks for stopping by Brother!

I like the Grill Dome, as as you probably know, I also have a Kamado Joe Classic, and the biggest difference I see between them are the grate systems. Nothing wrong with either one, but I am a little partial to the Kamado Joe because it allows me room to insert a drip pan under the grate, where as the Grill dome doesn't allow any room for that with their current design, but the Grill Dome is more efficient on lump charcoal usage than the Kamado Joe is. They both do a fantastic job, but the walls are heavier on the Grill Dome which explains the fuel efficiency, not that the Kamado is a fuel hog, because it is not. It is very efficient as well, but not as much as the Grill Dome. Also on my Kamado Joe, I have a ash tray made out of stainless, that makes cleaning a snap, but a little more labor intensive with the Grill Dome. They both do a fantastic job cooking, and both have up and downs as I mentioned, but the Grill Dome can be purchased and shipped cheaper then what you would pay for the Kamado Joe. There is my review, lol ;)

Thanks John! This little pork steaks were freaking amazing brother! I bought my stainless steel basting brush here locally at Academy Sports, but you can find them online. Works really good! Really holds the sauce in, until it touches the meat.

ive had this cut before, without all of the seasoning, and it tasted just like bacon!
Greetings from North East Arkansas. We are only an hour north of Memphis and can get Rendezvous rub and sauce at Kroger. The rub rocks, I personally prefer Sweet Baby Rays sauce. I do love a good pork steaks, but do mine in the oven. I have to try your grill method, those pork steaks look outstanding.

Question, Where did you get the heavy duty grates for your weber? I hate the cheap ones that came with it. Just bought a SantaMaria. Will use it Thurs for the first time.
Always great to hear from a fellow Mississippian! I got the grates from a company called Craycort. Here is a link to their website. www.cast-iron-grate.com/ The Weber is a great grill but their grates have a lot to be desired. I wish they would at least make them out of stainless. Rust is usually what destroys them pretty fast.
hey Russ,, I've done exactly what you did here except for one change, I had the butcher cut the pork butt about twice as thick as you had, really made a difference, try it!,, BTW hope you got to visit the rendezvous lounge in Memphis, I did it was really great,

Looks great and I love the chain mop. But I think the water pans do very little for the outcome of the meat. I have BBQ'ed both ways many times and have noticed literally zero difference. Only my opinion.

I'm sitting here drooling, great video and terrific looking steaks. I'll bet they were delicious. A couple of questions for you; #1, What thickness is the griddle plate that you use at the beginning to seer the steaks? Is it from Weber or made locally? #2, The mop with the SS mop head head that you use to sauce the steaks, where is that from? Must be far easier to clean then other versions. Great videos. I have a mess of pork steaks, I'll give that a whirl. About how long did you sear them for? Also you should give are regional sauce a try, it's a marinated and basting sauce. It's called Cornell sauce or firemans chicken up here north central Pa.

I did this video a few years ago, but I'm pretty sure I would have cooked them low and slow, till they reached pulled pork tenderness which is 200 degrees F for me, then if I seared them it would have only been long enough to get a little char on each side. I don't remember seeing the Cornell Sauce around here, but I'll keep an eye out for it. Thanks again, I appreciate it :)

Yeah, the pork steaks you buy at the meat market are cut from the shoulder (Boston Butt), and it's a great way to cook pulled pork, if your only wanting to make a smaller amount, and they are great as just pork steaks as well. Thank you for watching :)

We live 45 minutes north of Memphis. Rendezvous is an awesome place. They are famous for their ribs and rightly so, it doesn't get much better. Add a baked potato to those pork steaks and I would be a happy camper.
Rendevzous seasoning has way too much cloves in it for my taste. cloves are best for an oven ham not bbq. just my .02 ymmv

I can find the sauce and I’ve used it a few times, but I can’t find the rub. Sauce is real good. Pork steaks should be made the way you made them. Get them from the butcher case on a weeknight and there it is! Thanks for the video!

Sir I am a little confused with the internal temp of the pork steaks. You said you cook them to 195 degrees, but I was always told the higher the temp the drier they get. I am I wrong or how do you get around drying them out? I would appreciate any feedback.
Depends on where the cut comes from on the pig. Porks steaks is usually taken from the shoulder where there is a lot of intramuscular fat, which means it will not dry out just like a whole pork shoulder (Boston Butt) doesn't dry out when you cook it to 200 plus degrees internally (probe tender). Since it does come from the pork shoulder then it is a tuff cut of pork and has to be slow cooked to a higher temperature to break down the connective tissue and sinew to make it tender. Now the pork loin where pork chops come from is very lean and will dry out in a flash if they are cooked above 145 degrees internal, and that is the internal temperature I normally pull them off the grill. Some cuts are naturally more tender than other cuts from the animal. This is true with beef, lamb, or most any 4 legged animal. Hope this helps you out.

I agree the Rendezvous Rub and sauce is great, however, it is VERY expensive to order online and get shipped. I am glad you found someone local that could get you some quickly. And as well, I am sure you have heard of the Memphis Cheese plate, Rendezvous sprinkles the rub on their smoked sausage/cheese plate too and it is great.

I am a very big fan of salt pepper and garlic and onion only. But it does get old after a while. Sometimes I need to change it up. And my wife loves the extra stuff so who am I to deny her. She likes it, she gets it. I'm just glad this poster found a local source at a decent price.

Question, why the sear at the start, would they not be more moist if you start with rub and indirect cook ?
This method is all about building flavor! The crust that were created on these by frying, and then mixed with a low and slow smoke with the rub and then sauce induced a great flavor that is different from just smoking the meat. These turned out very tender and moist, with incredible flavor :)

I have to tell ya that Rendezvous sauce is my favorite store bought sauce (currently).
Yep I said store bought! I've been lucky enough to find the sauce at our local Target for about a good while before they quit selling it last year (I was depressed!). Usually I'll doctor a store bought sauce, but this needs little if any fiddling with for my taste.
I live in TN but on the opposite end of the state (~400 miles), so only been to Memphis twice, for a rendezvous, but not for the BBQ (ahem) ;) ... didn't know about anything about BBQ, way back then ... ;)
Then, just yesterday, same day you posted this, I found our new Publix store was carrying it - (and there was much rejoicing :) Now I'm well stocked (or 'well sauced?' ) at the moment! Haven't seen the seasoning in stores, tho...
sorry for the book, but I got stoked when I saw Rendezvous in your title, and it was indeed the very same sauce!

I Guess I take the fact of not only going to Rendezvous when I want but also able to get the Rendezvous Sauce & Rub here locally for granted .
The Sauce & Rub is sold here in a major grocery store , so im able to get the sauce & rub w/o actually going to Memphis . but I use both quite a bit & I like both very . much .
Just watching this is gonna make me run to the store tomorrow & get some pork steaks to cook . hmm I need to make sure I got the sauce & rub before I go to the store . (I have bought both @ the same time not realizing I had 2 bottles of both in the cabinet ...lol )

That really looks like a wonderful recipe. I think I'll give it a try. I have a clone recipe for the rub and the sauce. Even though they are "knock-offs",they should taste great. Thanks for the video and the great pork steak idea.
