i tried this recipe, instead of 3 cups of milk, i used 2 cups and 1/2 cup sugar. it took more than 1 hour to get thicken, maybe because i started on low heat to prevent from burning. now it is on airtight jar, i'll check in the morning and update my comment Edited: after one night in fridge, it thickened and tastes amazing. I make my own brown sugar. It is so much more cost effective than buying a 2 pound bag of brown sugar for almost $5. I can get a 4 lb bag of white sugar for $3, and a bottle of molasses for $5. A half cup to 3/4 cup of molasses to a 4 lb bag of white sugar mixed at the lowest speed in your Kitchen Aid mixer yields approximately 8-10 cups of brown sugar. The more molasses you put into the white sugar the darker your brown sugar. I always make light brown sugar. It’s a real money saver if you are a baker. It is stored in a glass jar with a tight fitting top. I also learned to make my own pancake mix that has dried milk powder in it. I also make my own pancake mix.

The thing about homemade stuff is the increased control. Organic condensed milk is hard to get here but organic milk's a bit easier to grab. If you're allergic to cow's milk, you can make condensed milk from sheep or goat milk. You just have so much more control.

Good idea, I couldn't make some recipes because I couldn't find sweetened condensed milk in the supermarket and wasn't sure how to replace it. Thanks for the recipe 🙂. What's also cool is to cook the milk with spices, like cinnamon vanilla and so on, and cook Christmas sweetened condensed milk. I once bought a can at an Asia market that I thought was sweetened condensed milk, and it said sweetened milk on it, but instead of the normal one, there was a brown border around the logo. It was Dulce de leche instead of sweetened condensed milk. I then changed my plan and made something with caramel.

If you make it in large batches for large recipe it might end up saving a lot more money, or if you can get really good quality milk that would make it worth it. I've also seen it made with coconut milk as a dairy free alternative, which I've never seen in stores. Ninja edit: I believe you can make it in a slow cooker if you don't want to babysit the recipe, especially in larger volumes
Now there's a good tip. I didn't try that but I also made a big batch. I would love to try it in my slow cooker. A slow cooker can burn it though. I would still check it regularly and sometimes turn it to warm to cool the cooker down. Thanks for the idea:)

Even easier: you don't need to stir it over the stove or babysit the pan at all. Just use the measuring cup you measured the milk with and you can evaporate it/ reduce it in the microwave. No chance of burning, no stirring. If you figure out the timing you can even further standardize the process for true walk away convenience. This brings the cost of making this way down in terms of labor, and the only reason I can see for having sweetened condensed milk is for food storage reasons.
How about storage? What I like about canned products is that they can stay for a long period of time in the shelf. Making a huge amount without knowing if it will store for a long time may force me to use it everyday and it's not good for my health haha.
Year ago I made my own condensed (and dulce de leche) and evaporated milk for tres leches using lactose free milk bc my gf at the time was intolerant. It was a lot of standing around making sure it doesnt burn, but to be honest if you are not doing anything or plannon watching a movie anyway it’s only really worth it to make a lactose free version.

I make my own simple syrup with a 2:1 ratio of sugar to water so that it's shelf stable and doesn't have to take up room in my refrigerator. I doubt I could do the same for milk unless it's canned. So I'll probably buy it at the store, but if I ever run out and need it in a pinch, it's good to know I can make it myself.

Mix 4 cups of sugar with 1/4 cups of cornstarch. Mix in small batches in your most aggressive blending device. Voila powdered sugar.
