Yes to Aroy-D! My parents used that brand decades ago, and it's still my go-to today for curries and desserts. It doesn't have any guar gum or other kind of added thickener; just straight-up coconut cream and water, so it's got a really punchy coconut flavour and is the perfect consistency. It also tends to be cheaper than the "Western" brands like Thai Kitchen, so win-win :D
I made this recipe using the champagne mangoes (6 for $7.99 at 99 Ranch). They are so sweet! My husband enjoyed the pudding, but said condensed milk would be it that much better! lol He's got a sweet tooth. Great recipe!! Thank you for sharing :)
can you turn them over onto a plate? I have these silicone molds in different shapes but I have been having trouble getting it to set and come out of the molds properly. Does this recipe have enough gelatine to keep them sturdy enough to come out of a more complicated mold?
