What's that you sprinkled on the onions at the very end please ? Good recipe I make some same way but with coriander chilli garlic and lots of turmeric 😋 very tasty. I like your recipe too 👍 Tip to save time throw everything exempt the lamb in food processor for a few seconds then just add to meat and chop but don't food processor meat or it doesn't cook the same
meat looked very lean.. should have added more fat and he didn't take the water out of the onions (CRITICAL). The extra moisture turns to steam and separates the meat from the skewer.

It is called isot. Basically it is hot red pepper flakes(no seeds,only pepper) marinated with olive oil and salt.
