- The tarragon leaves are superb in these little pies.
Here are the ingredients for the little pies:
2 cups cooked chicken
3 medium to small red potatoes, small cubes
1 medium carrot, sliced thin
1/2 stalk of celery, sliced thin
Tarragon leaves
Garlic powder
Onion powder
Salt to taste
Sauce for filling:
1/4 cup all-purpose flour (3 tablespoons flour for a thinner sauce)
3 tablespoons butter
2 cups (16 ounces) Half'n'Half (1/2 whipping cream and 1/2 milk)
Salt to taste
Bake in preheated 350-400 degree oven for 30 minutes until
crust is browned and inside is bubbly.

These pot pies look delicious! I would always get the pot pies from the vending machines in our high school for lunch. They were my favorite. Occasionally I get the Marie Callendar pot pies in the winter. I will have to try out your recipe. I was thinking that a little ground nutmeg and a few frozen peas could kick it to another level. I love to watch you cook and listen to your stories. I was born in the early 60’s and so much of what you share about games, products, society as a whole I can relate to. There are lots of great comfort foods out there, and chicken pot pie is one of my favorites! I'm sure I speak for many when I say your gentle Southern hospitality and wonderful recipes takes us back to fond memories of our Grandmother's kitchen.
Could you do a video sometime on the lost art of making homemade noodles? My mother made them when I was very young but, like most moms in that era, ended up buying the boxed variety at the grocery. Nothing quite compares with the taste of homemade noodles. An Amish lady once told me that the best noodle are made with duck eggs because they have a richer yolk. I don't know if that's true but Amish noodles are the closest thing I've found to homemade.

great stuff as always...I would suggest mixing the chicken and veggies right in the pan with the sauce, then you don't have to worry about portion control and you can taste it and add the extra seasoning to the whole batch before making the individual pies much easier than trying to mix the ingredients in those small bowls.

I just love your home cooking it was just like my momma^s God rest heart sweet soul lost her when I was only 18 and wish I had spent more time learning instead of hang with my friends now that I’m 54 sooo many things I wish I had taken the time to make thous beautiful memories. So many youth take for granted til it’s just to late but Thankyou for the lessons it turned out amazing and my families stomachs thank you too heeee

Great instructions for the chicken in the Instant Pot. I got one for Christmas and have enjoyed it so much. This pot pie looks delicious and will be worth the time and effort to have some freezer meals.

Miss Phyllis, I was so sorry to hear you have been sick. I really enjoy your videos (they are much better than anything on TV). One little trick that might help out if you don't feel like spending a lot of time in the kitchen is Keystone canned chicken. It only has chicken & sea salt. You can find it at Walmart or Walmart com. I found out by accident how good it was...I had bought a couple of cans in case the power went out a few years ago. It is so easy when you don't feel like spending a lot of time in the kitchen.They have other canned meats also. I am praying for you and Mr. Bucky and your two little dogs. I hope you recover quickly from your surgery. Get well soon!
This is one of my husband's favorites. I make mine double crust. If I have leftover gravy I'll add that to the sauce. If not I add a little chicken bouillon granules. These are quite popular after Thanksgiving, lol!
Going to get tarragon tomorrow, per your suggestion, Phyliss. You may remember that I have a miniature poodle, a rescue named Rudy...he’s apricot colored, and spoiled rotten. My brother in law (a veterinarian) told me to fry up lean ground turkey, and equal parts of rice, unseasoned of course. I make that up, and then place about a half a cup in a qt. freezer bag, and freeze them...every morning for breakfast, I heat Rudy’s little bag up in the microwave. When we eat breakfast, he barks, and waits for his too! Lol. 💙💙💙

c annett good day to you. I’m sorry you couldn’t see the rest of my comment. I wrote that I place about a half cup...sometimes more, into a quart sized freezer bag. Every morning I take one out of the freezer, place it in the microwave for about one minute. Rudy poodle, eats his breakfast along with us...lol. I adore chicken pot pies. And especially in the winter months. Great idea for individual pies. I like those pre-made pie crust too. I've also added the frozen packages of cauliflower and broccoli medley instead of mix vegetables to my chicken pot pie for a variety. It really was delicious. This looks SOOOOO good, yum! I think it'd be a great recipe for my elderly (86 & 87) parents for whom I'm caretaking, because I need to get more protein into them and that sauce looks like the rich, tasty trick that would do it. Also, I wonder if you've ever done a video for the recipe with chicken that you make for your dogs? Ages ago when I was a kid, my grandmother had the cutest and sweetest little poodle she named "Mouse". My gram would spoil her with chicken and rice or sometimes ground beef and rice with some kind of sauce, and afterward she'd crawl up in your lap, flip over on her back and expect a tummy rub. I don't think Mouse ever had regular store-bought dog food, but she was a sweet little dog and always wanted to cuddle. 😊😊😊

Ive had my Instapot and I'm loving it!!
I'm gonna make stuffed bell peppers and Lil porkie pine balls( left over meat bc my granddaughter is coming and she only likes the meat lol)
So Next I'm gonna make these chicken pot pies... I usually make a quick one with canned chicken or left over chicken, can cream chicken soup, can veg all... add salt n pepper n mix in a bowl... then add to a deep dish pie shell and cover the top with another pie shell and poke holes in it .... cook about 45 mins to an hour , depending on your oven .....
But my husband loves it and my kids always did!
It was something easy I made alot when I worked....
But you know me Ms.Phyllis~ I've gotta try yours!!

I once made Thanksgiving dinner for the whole family when I first got my first house. I wanted to do my own take on my mom's dressing, so I researched spices and things and experimented. I settled on one with tarragon & almonds and brought it out calling it Tarragon Almondine Dressing! I loved it and so did the females in the family - the men weren't so impressed. They wanted the "regular" dressing. But I thought I would share it here, because of the tarragon.
Mom's dressing really had no amounts listed because she just used "what looked right" to her. And so it varied in taste from year to year. But it basically consisted of a pan of cornbread - (usually made with a little sugar added) a large chopped onion, can of chicken broth, a few chopped boiled eggs, plenty of powdered sage, and salt and pepper to taste.
So I began with that, but I added one can of chicken and rice soup (today I would just cook a cup of rice and use that), a cup of blanched, toasted & slivered almonds, and several teaspoons of tarragon leaves. Bake @350 for 30-40 minutes, top with a scattering of the almonds. As always, when reworking a recipe for stuffing it dressing, you have to get the balance of wet to dry ingredients right as to how you want it.
Tarragon is a wonderful spice or herb or whatever it is. I don't think I would like it every day, but you tend to forget to use the things like that after a while.

Hi Phyllis , I made my poodles food too. I mixed the meat with vegetables beans broccoli carrots etc. My little girl loved salads. Their grandparents (breeders) fed their mothers a diet rich in vegetables. I think thats why they loved veggies too.

Hi Ms Phyllis! I picked up a package of chicken thighs today. I've "inherited" a dog and another cat after a friend of the family passed away suddenly. Geez...just watching you pour the sauce/gravy into the bowls...made my imagination smell and wish I could taste it. Will have to make these. I wonder if canned milk will work as well as the half and half? I plan to use that. I used it in your recipe for the cabbage and potatoes and it came out ok. Kudos to you, Phyllis for your skill and judgement as to how much to make to fill the bowls exactly and to know how to cut the pie crust just so it fits. BTW...I do the same with chicken thighs, bone in, skin on. Some for me, some for my dogs (2 of them).

Really nice pies and they make a beautiful meal! I often take leftovers from the week and turn the meat and veggies into a pot pie. I actually make a huge one for the whole family with a bottom crust too. That's a great idea though; my boys would probably love to have their own individual pie. Buying the crust already made would help me on busy days too. Thanks!
