The explanation to the helmet disappearing is quiet simple u see skeppy's inventory was full so he picked up now normally when you are in creative mode it always picks up items even though the inventory is full but it will not be in the inventory.

The helmet is probably a developer tool (similar to the world edit wand) just disguised as a golden helmet. For example the world edit wand is hidden as a wooden axe but it can be used to break, destroy, replace and do basically anything to a large quantity of land. The reason BBH wanted it so badly is probably because, with it, you could destroy the server.

Regarding your issue, when you are in creative, you can pick up items when your inventory is full but it will delete them
When your on creative and your inventory is full, the items you pick up dissappear. The golden helmet is gone forever.
