Even though it's street food, Korean still love their food to look and sit nicely wherever it is put down. They're likely trimming the edges so that the sandwich halves sit squarely, nicely and flat in the tray. I can understand the reasoning behind it being South Korean myself. I like my cooked food to look nice plated too! lol

Maíz (elote)
Semillas de chia
Ajonjolí tostado
Pimienta
Todo eso lo mezcla con un poco de pan molido para ponerlo sobre el pan y después pasarlo x una mezcla simple de harina y agua y se fríen
