Ok… you guys have just increased my bucket list in life. To see the Redwoods, stand at the base camp at Everest (not climb it, lol), see Paul Mcartney in concert, and last but just as important, fly the wife and I to Texas just to sit down and have a dinner that you guys consider your favorite recipes! Wouldn’t even need to stay! 😊 just fly out and break bread with the two best cooks ever! You two are the best!
I love how you always incorporate presentation, even with the prep (the mini bowls, keeping the spices separate in the bowl, etc). These videos and recipes are always 🔥🔥 Ps. I hate plastic wrap. It never wants to corporate with me. 😆
I went to Montego Bay, Jamaica about 6 years ago and WHAT A BLAST! Everywhere you walk, you can smell jerk chicken being cooked, and lots, loTS, LOTS.of other things being cooked and/or smoked.. 😆 I couldn't believe how many local girls asked me if they could braid my hair. I did let them braid it and they did a great job~ 👍 And true story... I won a dance contest at a local pub one night... 🤭 I'm usually a little shy, so I totally credit the win on the rum! ~~~~~~ p.s.. Your jerk chicken and mango salsa looks incredible!!!
We LOVE that about Jamaica! That and the blue water and delicious rum drinks! And...CONGRATS on winning the dance contest!!! That is AMAZING!!!! You have endless talents!! xoxo
It is soooo good! We decided to go ahead and figure out how to make it at home (we, too, loved it in Jamaica)...and think this version is pretty close to the real deal! Little heat and a little sweet is soooo good!!

You absolutely could cook it in the oven. Roast for 50 minutes at 375°F. Then, add the balsamic/tomato sauce topping and roast for another 20 minutes. Delicious!
