I think that Endora's dislike for mortals primarily extends from Darrin's overbearing attitude. This wasn't the only time Endora associated with Frank Stevens and took to him. In later episodes he'd flatter her with compliments and she'd gush like a school girl. I think its proof that Endora really just didn't like Darrin. Other mortals were OK if they were polite.
I think if Darren had allowed Samantha to use her witchcraft, she may have gotten along with him better. But, there is a difference between being friendly with a mortal , and marrying one. I think Endora would rather have had Samantha marry a warlock. Do it she would have approved any mortal married to her daughter

Endora at her most charming. Even Darrin played 'nice'. Mrs Stephens took an immediate dislike to Endora who was simply being nice. She even offered to go to the theater some other time, yet Darrin blames her for his mother's insecurities.
In addition to Samantha and Durwood there were lots of other interesting characters in this series particularly Samantha’s extended family. I particularly liked Aunt Clara. 😎
I love the scene where Endora says to Sam, "Samantha. You know, if you had married one of those nice warlocks that was crazy about you, this would've never happened." Great scene. This episode is also where Sam and Darrin are discussing the situation when Darrin makes a terriable remark about "the witch burnings" in Salami. That ticked Sam off.
