I think the type of rock matters too. The one you had looked really porous so maybe wasn't holding heat well. A slate type would probably work better.

I'm a hobby chef as well, but don't eat red meat anymore. If memory serves me, to cook a massive steak on a rock, the rock itself has to be in the fire/embers for quite awhile. I would have seared the steak and then put it on the rock. From a non meat eater, it looked awesome.
