    4 x small sirloin steaks, approx 7 oz.
    3 shallots, peeled
    4 ounces crimini mushrooms, cleaned (if crimini unavailable use button mushrooms instead)
    1 tablespoon salted butter
    1 garlic clove, peeled
    1 -2 tablespoons Worcestershire sauce, to taste
    1 tablespoon Dijon mustard
    1/3 cup brandy or cognac
    1 cup heavy cream
    Small handful of flat-leaf parsley
    Preparation
    Using a rolling pin, roll out the steaks to flatten and cut off any excess fat. Season the steaks on both sides with salt and pepper. Heat a little olive oil in a skillet pan large enough to accommodate the 4 steaks in one layer. Quickly sauté the steaks for up to a minute on each side then remove from the pan and set aside to rest.
    To make the sauce for the steaks, heat some olive oil in a separate pan. Slice the shallots and add to the pan, allow to soften briefly before slicing and adding the mushrooms with a tablespoon of butter. Crush in the garlic using a garlic press.
    Add the Worcestershire sauce, then the mustard and heat through for a minute. Turn up the heat and tilt the pan away from you. Pour the brandy into the far end and allow it to ignite - be careful that the flame that flares up doesn't singe your eyebrows! Once the alcohol has burnt off, swirl the juices around the pan. Add the cream and allow the sauce to thicken before turning down the heat. ntroduce the steaks back into the pan and cook a little further depending on how well done you would like them. Chop the parsley and add half to the pan.
    T o serve, divide some sautéed potatoes between plates with a spoonful of peas. Arrange the steaks alongside, spoon the sauce on top and sprinkle with the remaining parsley.

      +Callum Wilson making the sauce in the steak juices/drippings helps retain more flavor and add density to the sauce. as well as being economical with the number of pans used.

    Like I say, it's fast and easy, I credit chef ramsay. I don't use brandy I use chicken or veggie stock, it works just as well, it's not expensive it's a regular dish for everyone, follow the steps accordingly on how well you want your food, time is not the factor, if you want a nice crunch to the veggies in the sauce cook less, if soft and creamy, cook more it's all your choice, that's the beauty of Gordon's recipes, you are the creator, you are the boss.

    it takes me 20 minutes to even try to cut off the fat of the steak

  • @noneno6927
    @noneno6927 6 років тому +8

    For one who want recipe more specifically
    For a main course, remember. Add olive oil to a hot pan. Remove the fat from the steak. Roll out thin and season. Fried quickly both sides then set aside. Into the same pan, add chopped shallots and season. Add s slice of mushroom and a knob of butter and garlic. Then add a spice of Worcestershire sauce and Dijon mustard. Pour a dash of Brandy and flambe. Once the alcohol is burned off. Swirl the juices, add the cream and stir with chopped parsley. Return the steak and cooked. For sautéed potatoes, need oil, slice the potato in half and place upside down. Season, add crush garlic and rosemary. Platter and put the sauces over the steak. Steak Diane with sautéed potatoes and peas. Done !!

    I LOVE these videos. I wish there was more. It's quick, explains it in a simple way, doesn't dick around with cheesy introductions, gets to the point. Gorden, I love you and your food madly, but get a new editor. The shots are cut too quick - and they're mostly out of focus. They are the cinematic equivilant of undercooked , sloppily prepared, dishes - something I know you'd never stand for.

    • @patrickfelix7253

      When you cook the alcohol it burns out already, you just get the flavor of the rum then, the alcohol is all gone ;)

    • @Meloncov
      @Meloncov 10 років тому +5

      Patrick Felix It doesn't all burn away. The vast majority does; there's no way you're gonna get drunk on it, but if you have serious medical sensitivity to alcohol you still should avoid foods cooked with alcohol.

    Traditional "Steak Diane" does NOT use garlic, nor mushrooms. Missing demiglace or rich beef broth and a dollop of tomatoe paste. What this essentially is - a mushroomed sauced steak.

    I must admit. If you have the basic nod of cooking these 1 minute snapshots are great. You got a pause button, and well. You got more time than a minute so it's gotta taste better than Ramsay's! Ha ha. Love it! And this is a classic something i wouldn't normally order or cook after work but really good. Thanks. ...Oh one more thing. Bring back the Kitchen Nightmare's in the UK!
