✰ Vegan Breakfast Tacos
Serves 4
12 Slices Vegan Tempeh Bacon, such as LighttLife
2 tbsp olive oil
1 bottle Just Egg
Salt and pepper to taste
12 Mi Rancho Taco Slider Tortillas
Salsa, vegan sour cream and/or cheese and fresh cilantro for topping
✰ Vegan Caramel Apple Nachos
Serves 2-4
Cinnamon-Sugar Chips
6 medium Mi Rancho Tortillas, corn or flour if desired
2 tbsp melted vegan butter
2 tbsp cane sugar
3/4 tsp cinnamon
pinch of salt
Cinnamon Apples
3 Granny Smith Apples, peeled and chopped
1 tsp cinnamon
1/4 tsp ground allspice
1/8 tsp ground cloves
3 tbsp cane sugar
1 tbsp lemon juice
pinch of salt
Brown Sugar Caramel Sauce
1/4 cup maple
1/4 cup light brown sugar, packed
1/4 cup fresh orange juice, (about 1 very large navel orange)
1 tbsp cornstarch
1 tbsp vegan butter
1/8 tsp kosher salt
Vegan Ice Cream for serving
Preheat the oven to 375 degrees. Then combine the apples apples, spice, sugar, lemon juice and salt and toss to coat. Transfer to baking dish and bake for 20-25 minutes or until fork tender.
Next, cut the tortillas into 8 pieces and place on a cookie sheet in a single layer. Combine the sugar and cinnamon in a small bowl, then brush each chip with melted butter and sprinkle generously with the cinnamon sugar mixture. Bake for 15 minutes then cool on a rack to crisp up completely. Once cool, arrange the chips on a plate and top with the apples.
Then make the caramel by combining the brown sugar, maple syrup, corn starch and orange juice in a saucepan and bring to a simmer over medium heat. Cook for 3 minutes then remove from the heat and whisk in the vegan butter and salt.
Scoop vanilla ice cream on top of each serving of nachos and drizzle the warm caramel sauce on top.

I saved that soup recipe to get the ingredients in my next grocery shop- I really love the use of the tempeh and I want to see if my husband will enjoy it made in a soup like this because I’ve tried making it in stir fry form or BBQ style and he’s not a fan but this soup looks like a winner! For anyone trying to make ancient Mexican inspired recipes heres a list of some pre colonial foods in Mexico corn all main types (popcorn, dent corn, flint corn and fresh corn), some types of beans such as some types of white, black turtle and pinto (NOT soy, chickpeas or lentils although used now), winter squashes such as butternut, pumpkin and kabocha like squashes, summer squashes such as zucchini, tomatoes, chayote, amaranth, chiles, papayas, cherimoyas, guavas, avocados, sapotes, amaranth, corn fungus, mushrooms, potatoes, sweet potatoes, chia seeds, pumpkin seeds, cocao (non of thrse ingredients existed in the "old world" until after colonization) insects (the diet was almost entirely plant based with almost no meat from large animals and NO dairy )

Yes it’s very very similar, you’re so right! But it doesn’t have hominy in it so I couldn’t technically call it a pozole but the flavors are close so if you like pozole you’ll love this recipe ☺️☺️ hope you enjoy Molly! Happy Sunday

So are you not a fan of Black Salt for that “eggy” flavor? I bought some but haven’t had the guts to try it yet.
A lot of people like it and I’ve enjoyed it in the past but I don’t use it at home because that sulphuric taste is something I didn’t like about chickens eggs before I was vegan so I don’t add it to tofu eggs now ☺️ Just a personal preference. Try it and let me know what you think!

We are going to a friendsgiving with 125 people attending. A handful are asked to bring green beans. We are one of them. I want to make something with green beans that blows them away with taste. I want to eat it as well- so no mushrooms. The majority that live in our community are not vegan. Could you help me create something so delicious that the dish will say taste me first. There are no other vegetables on their menu plans.
