  • In this episode of Classic Bites chef Ross Magnaye from award-winning Melbourne restaurant Serai takes host Mitch Orr to experience the Filipino flavours of his childhood at Inasal Express. Inasal in Tagalog means char-grilled or roasted meat using sweet and sour flavours. Here the guys try both a beef short rib inasal and a beef tapa dish - tapa being marinated or cured slices of meat. Next they head back to Serai where Ross combines his memories of growing up in the Philippines with the experience of Inasal Express to create a Filipino inspired dish cooked over the open flames.
