Flour is Bread Flour
(Feed your sourdough around 8 hours before, I feed mine with cool water at 1:2:2)

If I put it in the fridge overnight, do I need to bring it back to room temperature the next day before working with it?
Great question! Give it at least 2 hours and then see how it’s feeling. If it won’t take the slipper shape because it’s too cold, wait for it to warm more
Is it necessary to use a baking pan with higher sides? Ie. Could you use a sheet pan?
100% you can use a sheet pan
Possible to add wheat bran for fiber? If yes, when would I add it?
Never tried! I would add with the flour
Could i add some whole wheat flour- if so, how much could i get away with?
Start with no more than 20% and go from there. You may want a little more water but keep it the same for the first bake to try out.
How much time between coil folds?
1 hour. Little timer in the bottom right hand corner to help!
Is the flour APF ?
bread flour! If you want to use AP, drop to 75-77% water
