    Congratulations. Love competing more,,, but Louisiana not like tx There a lot cookoff in Louisiana but because we cook everything. Cook offs are jambalaya,gumbo, chilli…. Etc….love BCA but not often it a short drive. You lucky there Bbq competition every weekend in tx….

    You called it a butt, then you said the bacon was under the fat cap???

      Competition cooks call the meat under the fat cap “bacon” because when a whole hog is cooked the actual pork belly, which bacon comes from, gets that texture!

      We hit Reserve Grand Champion. 4th Ribs and 1st Pork which was featured in the video.

      It wasn’t! It was a CBA competition. This is the largest sanctioning body we have in Texas currently.

    Cant build upna bark wrapped in foil kid. Ive never had to wrap, inject, add butter, buy seasonings, add "magic"... unsubing... suprised you didnt use the microwave...😅 who are the judges? Local radio DJs and the city council?

      You doing alright today, brother? I hope your day gets better! It’s Competition BBQ. It’s different than backyard BBQ. Every top cook in KCBS cooks like this, it’s a fact. I think the best part about BBQ is you can cook however you’d like, so keep on cooking good food and it’s a win win for all of us!
