Coloring the strawberries with lipstick ensures that every photo taken has the strawberry at the right color. If they decided to keep three pictures after the shoot, that would be three pictures to photoshop. An equal if not bigger time sink. I think it's a photographer's duty to make the photo as good as they can prior to the editing phase.
@A water guy. Should you have qualifications that I do not, I welcome you to share a link to your website. As part of my hobby, I edit origami photos on a near-weekly basis. If the picture is taken at an unsatisfactory angle or if the lighting is off, then no amount of editing can make the results appear _better_ than edits on a more thoughtfully-taken photo. Reiterating my opinion, it is therefore the photographer's duty to think creatively and often ridiculously (i.e. lipstick on strawberries) about how to decrease the time spent in Photoshop.
@A water guy. 1 minute to trace around the strawberries carefully. 10 seconds to find the best hue and mess around with brightness and contrast. 5 minutes to make sure that the highlights and shadows still look natural. Repeat process for every image. The scene from 3:41-3:42 would not be convenient to make. 15 minutes to color all of the strawberries. Even if it takes 8 minutes per, if the photographer is willing, does time matter? Can take multiple photos from various angles. 3:41-3:42 made possible. You know, maybe not all food photographers as insane enough to color each strawberry. Maybe the majority do prefer photoshopping, and the video just wants to create surprises for the views. But putting in effort prior to photoshopping pays off.
A water guy. I rest my case. 'Select by color' is highly efficient and yields impressive results. You have the freedom to call that photographer crazy. And you can call me weird too for supporting the lipstick method. The end. Let me sleep.

@Trantor The Troll Oh! That's a really good point. Color photography gained traction in the 1920s, and Adobe started selling Photoshop in 1988. That is a huge time period gap. o.o
