This has been helpful. Ecocloud and Avacado are on my short list for replacement mattresses. I have tried the soft version of Sleep-on-Latex but it wasn’t thick enough and bottomed out. I am also considering ordering individual bed components such as 3 layers of soft-medium-firm latex and possibly a set of base coils. I do like it that the bed will be adjustable but not sure of the hassle and lack of unifying cover.

Thanks for the video. There is more to know. I have some input. This was a good summary, but folks need to delve further into the models. Not Paul Harvey's "The Rest of the Story," but maybe useful info below:
Regarding the Awara, your video illustrated only dunlop latex; that is confirmed on their website which stipulates 4" of Dunlop Latex. but during the Awara segment, you brushed your hand over what appeared to Talalay latex.
The Nola Natural mattress does use Talalay latex, but for some reason it uses one 2" layer and an additional 1" layer. There is no mention whether these are laminated or glued. This could eventually cause bunching if not done correctly. In fact there are a few layers of fabric that will permanently depress over time (with no mention of how they are fixed.) The coils are individual and linear, which can cause lean.
The Winkbed's website shows it using a Euro-Pillow gel infused foam that is quilted (a good thing.) And the mattress has pocket coils which includes helpful edge coils, but can cause lean. There are several layers that will get permanently depressed.
The Avocado Green use both Dunlop and Taylalay latex. That is about all that is revealed. It has a pillow top on a couple of models, which is tufted but may permanently depress after a time. The website seems to be mostly sizzle and not much steak. It has the least detailed information of the group.
The Plushbed Botanical bliss doesn't have coils. It has a lot of layers, including Dunlop and Talalay latex. Three layers are subject to permanent depression.

So basically you think all latex mattresses are inferior? Or is there one that you think is a good mattress? (For side sleepers)

I wasn't really writing to advocate for anything in particular. I think the way the bed is put together may be more important. Some makers don't state whether layers have been glued or tufted. Glued layers may shift and get lumpy. And, layers might be subject to permanent compression, which will affect the bed early in its lifespan.
For me, it seems that simple is better. I actually purchased a bed, after I wrote this opinion. I purchased a bed with 8" springs that are joined in groups of 4 instead of inline. The edge of the springs is reinforced by a different size and strength coil instead of steel wire. This bottom layer has a zippered pocket above the coils. I chose 3" Talalay latex for this pocket layer. Talalay has a good reputation for keeping its form for 8 to 10 years. And, it can be changed when it does become permanently compressed. Sewn into the top "pocket" is a thin wool pad, which gives a little separation from the latex layer. It has the simplest structure I could find.
My previous bed had several layers of latex (each with a separate firmness.) It was also contoured with a couple of softer zones that were supposed to allow body alignment. I was only happy with the bed for 5 years. Later, I tried using plywood to fix it. But, I needed another bed.
I cannot give a long term review of my new bed. The first night, I felt like I fell into it. But, the next morning my shoulder was fine. I only woke once during the night instead of three times. And, I can finally sleep for 8 hours. This bed is different from anything I've experienced before. But, If I keep having good sleep, I'll be very happy.
