Tsukune 😋 Japanese chicken balls!

- Maya presents tsukune, Japanese chicken dumplings!
This is an easy recipe to make!
You will need:
For the dumplings:
- 300g of chicken
- Chives (according to your taste)
- 1 egg
- 1 teaspoon of soy sauce (www.satsuki.fr...)
- 1 tablespoon of katakuriko (potato starch: www.satsuki.fr... )
- 1 piece of ginger (according to your taste)
- 80g of onions
- A grater for ginger (www.satsuki.fr...)
- a mixer
For the sauce:
- 1 tablespoon of cooking sake (www.satsuki.fr...)
- 3 tablespoons mirin
- 1 teaspoon of sugar
- 1 tablespoon and ½ of soy sauce (www.satsuki.fr...)
- 1 teaspoon of katakuriko (potato starch: satsuki.fr/kat...)
Preparing the dumplings:
- Coarsely chop the chicken
- Put it in the blender
- Chop the chives
- Chop the onions
- Remove the skin from the piece of ginger then grate it
- Put everything in a bowl or salad bowl
- Separate the white from the egg yolk (keep the yolk well)
- Add the egg white to the preparation
- Add the soy sauce
- Mix everything well (it must be very sticky)
- Before forming the tsukune, you can wet your hands to prevent it from sticking
- Then make the small balls (in a slightly oval shape)
Sauce preparation:
- Mix sake, mirin, sugar and soy sauce
Then proceed to cooking:
- Heat your pan
- Add a drizzle of vegetable oil
- Once the pan is hot, put your meatballs in it
- Cook for 2 minutes over medium heat
- Turn the meatballs over and cook for 6 minutes with a lid
- Add the sauce then the katakuriko and turn the meatballs over (the tsukune must be well soaked in sauce)
- Turn off the fire
- You can use small wooden skewers to serve them as an aperitif (www.satsuki.fr... )
- Break the yolk of your egg in a cup or a bowl (to dip the tsukune in it)
And now your tsukune are ready to be tasted!

Vous pouvez utiliser le minuteur de votre smartphone (si vous en possédez un). Celui de la vidéo a été acheté chez ikéa mais vous pouvez en trouver sur des sites de vente en ligne 😊

Un bloc de tofu égoutté et preddé avec une cuillete a café d'huile de sésame, un peu de sauce soja et de l'alcool (du porto ou du vin shaoxing) et ça fais très bien le taf
Nous autres Occidentaux nous ne pourrons JAMAIS reproduire la cuisine instantanée de type "cuisine de rue" asiatique car nos cuisinières à gaz ou électriques, ne sont pas assez puissantes. Là bas la cuisson se fait par...je l'appellerais "pyrolise" à des chaleurs extrémes que nos appareils ne prodiguent pas.
